La Pentola della Quercia Introduces New Summer Menus and Cocktail List

The season’s freshest ingredients showcased at Yaletown’s OPUS Hotel

As the summer sun heats up it brings sunshine to the city and a bounty of fresh fruits and vegetables to La Pentola della Quercia’s kitchen door with daily deliveries of fresh juicy fruits, summer squash and beautiful beets. La Pentola introduces a range of lighter dishes that complement the warmer summer season and an expanded cocktail list will be appearing at the bar with one of the widest list of digestifs in Western Canada.

“We’re excited to feature the season’s freshest fruit and vegetables on our new menus,” says La Pentola’s Co-owner & Chef, Lucais Syme. “This summer we’ll be featuring some awesome kale varieties, beautiful little beets, nettles, radicchio, carrots and fruits.”

Fresh beet and ricotta salad with pickled radishes and hazelnuts will be appearing on the menu, alongside ricotta gnocchi with fava beans, zucchini and pine nuts; nettle risotto and parmigiano reggiano; poached asparagus with soft quails’ egg and grated prosciutto; and daily market fresh fish ‘acqua pazza’ with clams and fregola. Dinner menus are priced at $60 or $75 per person for seven or ten courses, and include antipasti, pastas, main courses and dessert.

Pastry Chef Matt Wilson is sweetening things up for the summertime with fresh new desserts such as lemon balm mousse with strawberry essence and prosecco; dark chocolate ganache with prickly pear, licorice root sorbetto and nasturtium; cherries with pistachios, dark chocolate and grappa; and fresh raspberries with hazelnuts, black sesame and sorrel.

Echoing the kitchen’s ethos of combining fun with flavour, La Pentola’s comprehensive summer cocktail menu is focused on Italian bitters, fresh fruits, and housemade liqueurs. The new menu has been expanded to feature over 40 Italian, French, Argentine, and German digestifs – one of the widest selections in Western Canada.

The new menu will feature all of the restaurant’s spirits and amari, as well as classic cocktails and punches, bottled cocktails and weekly special features. Martin has come up with more creative cocktails to supplement the menu such as a housemade limoncello carefully crafted with the freshest fruits, and old-time sodas carbonated and bottled in-house.

Other creative summer drinks include the Negroni Rosato – a mix of gin, housemade Rose Vermouth, Campari and orange oil. The Ragazzina, which is inspired by 1970’s Italian icon Gloria Guida, features quince-infused Courvoisier VS, St. Germain, sparkling wine and peach bitters.

La Pentola continues their Famiglia Supper Series, hosted on the last Sunday of each month, with a Sicilian summer dinner this July. Join La Pentola on Sunday July 27 at 6:00pm to dine family style at a communal table with neighbours and friends. For the 10+ course Italian feast Chef Lucais will feature fresh tomatoes, capers, new potatoes, as well as Sicilian inspired fish, seafood, meat and farm fresh vegetable dishes.
