Truffled Ricotta & Hazelnut Toast

*Makes two toasts

 

  1. TRUFFLED PU’ER TEA HONEY

INGREDIENTS

1 cup Honey

1/2 oz Truffle paste or peelings

1/2 oz Dried tangerine/orange peel

2 tsp Roasted Iron Goddess of Mercy oolong tea leaves

Add freshly cracked black pepper to taste.

Add fine Himalayan Pink Salt to taste (substitute salt of choice).

METHOD

Mix all ingredients together (one day in advance is suggested) and keep refrigerated.

  1. TRUFFLED RICOTTA

INGREDIENTS

1 cup Ricotta cheese

1 oz Truffle paste or peelings

1 ea Lemon, just the zest

Add freshly cracked black pepper to taste.

Add fine Himalayan Pink Salt to taste (substitute salt of choice).

METHOD

Mix all ingredients together one hour in advance and keep refrigerated.

  1. RICOTTA AND HAZELNUT TOAST

INGREDIENTS

2 pc. Rustic sliced bread

2 oz Truffled Ricotta

2 oz Toasted Hazelnuts, coarsely crushed

2 tsp Turffled pu’er tea honey

1/2 ea Orange, just the zest

Add freshly cracked black pepper to taste.

Add fine Himalayan Pink Salt to taste (substitute salt of choice).

METHOD

Toast both pieces of bread.

Spread truffled ricotta on toast.

Top with crushed hazelnuts to taste.

Drizzle honey over top.

Finish with orange zest and salt and pepper.

While Cha Le teas are steeped in tradition, the Yaletown Cafe is not your typical Chinese teahouse. Gone are the antique teapots, replaced by a state-of-the-art, computer-controlled glass vacuum brewing system that customizes temperature and brewing times for each individual tea to ensure optimal results. Most teas can be prepared and steeped to perfection within 90 seconds, less than the time it takes to make an espresso latte.
Designed by Leckie Studio Architecture + Design Inc., the café space is maximized with full walls of custom millwork shelving and a central tea bar where customers can watch the show of their teas being brewed into ceramic mugs thrown by Vancouver Island-based ceramics artist Rachel Saunders or in eco-friendly to-go cups. A tranquil and comfortable seating nook with eight seats is also available for a more tranquil experience.

Cha Le is open seven days a week, 8am to 6pm Monday to Friday; 10am to 6pm Saturday and Sunday.
