Hello Nori’s first ever Signature establishment – Hello Nori Signature, opened at Park Royal on Lunar New Year day. Designed with a wabi sabi aesthetic that embraces the beauty of imperfection, the bright, spacious, naturally-lit interior and unique waving wood-beam ceiling invites you to take a seat around the main bar on one of the 38 cushioned seats for a delightful dining experience. For intimate groups of 2-6, table seating (walk-in only) along the large Aeroframe windows is available.
Hello Nori Signature’s menu boasts new grilled items and small plates and an expanded bar menu of artisan cocktails, premium sake, and rare Japanese whiskies. The famous hand rolls are exclusively served at the main bar by dedicated sushi chefs. Bar seat reservations (via Open Table) are highly recommended.

Pacific Jumbo Scallops with yuzu vinaigrette and chimichurri, grilled on a Kosei infrared grill with Japanese charcoal on top. – These smoky, plump, moist scallops were caramelized to perfection. Tip: slurp up all that delicious smoky-citrusy sauce right out of the shell with the scallop for a delightful umami bomb explosion!
Salted Egg Yolk Soft-shell Crab Karagge with salted egg yolk sauce. – we got primal with this dish. Ripped and dipped! Hot, crunchy comfort food. And it stayed crunchy throughout!

Ninki Ichi Rice Magic Sparkling Red Sake – naturally sparkling with delicate bubbles and blush pink from the Asamurasaki red rice it’s made with, this is the best sparkling sake I’ve ever had.
Hello Nori Signature blew my mind – Fantastic food, cosy atmosphere, comfy seats, and genuine service. I cannot wait to make a date night return visit to try their signature hand rolls (yes I’m still a hand roll virgin!)
