The Secret Garden returns to H Tasting Lounge at The Westin Bayshore, Vancouver, on March 8. Immerse yourself in the enchantment of Vancouver’s flourishing spring season with a dining experience in a private garden-themed dome.
Experience vibrant cocktails alongside a luscious menu, crafted from the finest local ingredients — all backdropped by the striking beauty of Coal Harbour, as cherry blossom season spreads a blanket of pink and white along the seawall.
Each dome is adorned with lush foliage and twinkling lights, and has its own sound, heat and fresh-air systems.
The Secret Garden experience blossoms with spring cuisine offering the fresh promise of the season, including a starter of house-made Spring Onion Focaccia to dip in the melty goodness of a confit garlic and herb candle and Augusto aged balsamic.
The bounty of the ocean is represented in a Bouillabaisse of tomato dashi broth with scallop, shrimp, mussels, and confit fennel. For a truly unforgettable entrée, order a fragrant Hay Smoked Game Hen for two, with sumptuous maple glaze, herb potato dumplings and truffle soy jus.
Other enticing entrée options include a Seafood Pasta of fresh squid ink fettucine with roasted tomato and mascarpone sauce with clams, mussels and prawns, accented with chili crisp and herb pangrattato crowned with crispy basil. Or savour char-grilled Prairie Rancher Steaks (available in a 10-oz New York Cut or 7-oz Butcher’s Cut Flatiron), which come with garlic and herb mushrooms, cipollini onion, grilled rapini and fingerling potatoes in a confit of beef tallow, served with umami butter and red wine jus.
Cocktail aficionados will revel in imaginative spring-themed concoctions such as the Hands of Harmony, an effervescent and fragrant libation that combines Fermentorium Distilling’s Stump Coastal Gin, Genmaicha soda; and mandarin; and well as the “Laka a Lono,” a floral, rum-based cocktail inspired by Hawaiian mythology and the blooming of flowers on the Hawaiian Archipelago.
Among the sweet notes to finish are an indulgent Chocolate Cake with Manjari dark chocolate ganache, Chantilly cream, salted toffee and Bayshore honeycomb; or Lychee Mousse Cake with berry confit, matcha sponge and raspberry “soil.”

A credit card is required for reservations on Tock, with cancellations within 48 hours and no-shows subject to $75/person charge. Minimum spends for party sizes of up to six people, excluding tax and gratuity are: weekday lunch $150; weekend lunch $300; Sunday–Thursday dinner $250; Friday–Saturday dinner $500.
