Earls Launches New Spring Menu
Fresh New Dishes, and a Lineup of Cocktails by Acclaimed Bartender Katie Ingram

Earls Restaurant Group is celebrating Spring 2024 with a new menu focused on refreshing cocktails, including a lineup of inventive margaritas and fruit-forward slushes and sours crafted by award-winning bartender Katie Ingram. Bringing years of experience and a passion for cocktail culture, Katie has developed the latest lineup of new cocktails, drawing inspiration from her time working at Flore, a two-Michelin star restaurant in Amsterdam, and from her years working behind some of Vancouver’s top bars, including L’Abattoir, Elisa and as the General Manager at AnnaLena.
The Spring cocktail menu leans into Earls’ strength – amazing Margaritas made with fresh-squeezed lime juice and 100% agave tequilas. Katie has updated the classic Earls Margarita with a slight recipe tweak and a sleek new look. She’s also excited to introduce the Coconut Mango Margarita, a tropical summer sipper that strikes a perfect balance between fruity and refreshing, and the luxe Crystal Margarita, which features ultra-premium Cristalino tequila in a crystal clear cocktail rimmed with black gold salt for serious table envy.
“My favourite cocktail is (and always has been) a Margarita. I am most excited about creating variations on a hero cocktail that I cannot get enough of!” says Katie.
Beyond Margaritas, Katie also created two new summer-ready cocktails made for patio sipping: the Strawberry Guava Slush and the White Peach Whiskey Sour. The former nails tropical vacation vibes in a frozen cocktail, while the latter offers a sophisticated, refreshing, and sunny twist on a classic whiskey sour.
“I’m beyond excited to join the Cocktail Development team at Earls,” says Katie Ingram. “I love being able to flex our creative and curious muscles as we experiment with trends and innovative flavour combinations. I love elevating each of our guest’s experiences with their new favourite cocktail.”
For food, Earls is introducing new dishes, offering a selection of new and exciting options packed with fresh and vibrant ingredients. The Sesame Citrus Noodle Bowl just might be their most flavourful bowl yet, and combines chilled ube noodles and fresh herbed greens tossed in a citrus chilli dressing, topped off with peanuts and crispy onions and paired perfectly with your choice of seared Ahi tuna, grilled chicken or tofu. The Yuzu Calamari meanwhile, is a fresh take on calamari, with refreshing cucumber and spicy jalapeno, paired with a tangy yuzu aioli. And finally, the Cobb Salad is a classic reinvented with the modern guest in mind. Light but filling, with fresh herbs and all the delicious ingredients you would expect from a Cobb Salad, topped with a choice of chicken, steak or prawns.
New dishes and cocktails will roll out across all Earls locations and will be available as of May 1st.
