Italian-Inspired Appetizers, Hand-Made Pasta Dishes, ‘Dolce’ Dessert Courses
Loam Bistro Head Chef and Co-Owner Rahul Negi is going back to the basics of his culinary training and adding an Italian-inspired Summer Pasta Pop-Up to the menu on weekends starting Friday, July 18 at the beloved brunch hotspot located in the heart of North Vancouver’s Lower Lonsdale district (230 Esplanade West).
Available Fridays and Saturdays from 5 to 9 p.m., Loam’s Summer Pasta Pop-Up offers pasta aficionados a show-stopping tour of classic and contemporary Italian fare comprising fresh, West Coast ingredients via appetizers like Heirloom Burrata Caprese, Grilled Peaches & Prosciutto and Roasted Bell Pepper & Anchovy Bruschetta, main-course dishes including Rigatoni alla Bolognese, Gnocchi Romesco, Spaghetti Carbonara and Truffle Mushroom Risotto and sweet finishes such as Mango Tiramisu and Pistachio-Crusted Poached Pear, among others.
The summer series will be complemented by wine and sparkling wine hand-picked from Vancouver-based artisanal purveyor Sansorium, which showcases an array of low-alcohol and zero-proof beer, spirits and wine varietals from producers such as Edenvale, Le Petit Chavin, Glimmer, Leitz, Sangre de Toro, Colibri and others, with plans to add a selection of New and Old World wines to the menu as the pop-up continues through the summer.

Negi sharpened his skills and honed his chops for preparing hand-made pasta and sauces in five-star hotel kitchens around the world as well as at Vancouver’s Joe Fortes Seafood & Chop House and Robba di Matti before opening Loam Bistro in the fall of 2024 with life and business partner Honoka Saito.
“I’ve always had a love for pasta and how it can be complemented so elegantly and effortlessly by simple, light and hearty sauces and fresh ingredients,” says Negi. “We’re excited to write a new chapter for our little brunch restaurant and take longtime fans and new visitors on a tour of all the things that make Italy the culinary destination that it is as we celebrate the time-honoured art of pasta making.”
Located in a bright, cozy space with plenty of natural light, lush greenery and natural wood elements that reflect its North Shore neighbourhood, Loam is located walking distance of Lonsdale Quay and the SeaBus and has garnered rave reviews since opening, including the title of Favourite New Restaurant in the 2025 North Shore News Readers’ Choice Awards.
