Menus Ideal for Festive Events Include Customized Iron Chef

Pacific Institute of Culinary Arts (PICAchef) is showcasing an array of customizable culinary experiences perfect for corporate and private group events now available to be booked for the festive season and beyond at the campus adjacent Granville Island.

PICA chef’s lineup of group experiences include the long-time fan favourite and staple on the school’s lineup of cooking classes, the Iron Chef Experience — perfectly suited for corporate events and team-building activities, anniversaries, birthday and bridal parties and all types of celebrations.

The Iron Chef Experience accommodates groups of up to 45 and divides participants into groups that are presented with a secret ingredient they must use to prepare two courses in one hour. After the countdown ends and a PICA chef judges the courses, a winning team is crowned as Iron Chef champions before all guests gather to enjoy a three-course menu prepared by PICA’s culinary team.

The three-course plated celebration menu following the Iron Chef challenge offers guests a choice of Aubergine + Lavash (charred aubergine, lavash crisp, young radish, harissa vinaigrette); Tuna Tataki (line-caught Albacore, smoked umami rub, gem hearts, sweet turnip, kombu aioli) or Autumn Harvest Salad (market greens, crisp vegetables, spiced pumpkin seed brittle, sherry mustard dressing)as a first course and a choice of Braised Local Grass-Fed Short Rib (pomme fondant, parmesan gremolata, glazed root vegetables), BC Ling Cod à la Poêle (pan seared BC Ling Cod, Tokyo turnips, roasted fingerlings, white soy crema) or Sweet Corn Risotto (corn velouté, tarragon, broccolini, crème fraiche, miso butter) as a second course, with a Chef’s Inspired selection for dessert. Special diets and allergies can almost always be accommodated.

Each event is fully customizable and includes an hour of cooking time in PICA chef’s kitchens, all necessary ingredients, take-home PICA chef-branded aprons for each guest, feedback from PICA chefs, and a three-course dinner served in the waterfront dining room against the stunning backdrop of Granville Island, the city skyline and the mountains beyond.

Optional add-ons for each Iron Chef experience include wine or beer to be served in the kitchen and/or during dinner service and grazing boards (choice of: Cheese and Charcuterie Board, Seasonal Crudité Board, BC Smoked Salmon Platter, Seasonal Fruit Board) to enjoy before or during the Iron Chef events.

Also available for private and corporate events are a Buffet Menu (minimum 30 guests) for $209 per guest plus tax and gratuity as part of an Iron Chef experience or Buffet Only for $109 per guest plus tax and gratuity that includes selections such as Caesar Salad (Romaine, croutons, Parmesan), Grilled Vegetable Salad (Luciano kale, farro, herbs), Charred Broccolini (almond crunch, Parmesan), Roasted Baby Potatoes (fresh herbs, crème fraiche),Casarecce (Pomodoro sauce, Parmesan, parsley), Oven-Roasted Ling Cod (beurre blanc, fresh herbs), Herb-Crusted Sirloin (grainy mustard, herbs, red wine jus) and a Chef’s Selection of Seasonal Desserts as a finishing course.

PICA chef also offers a customizable menu of canapés (minimum two dozen per order) for private events that features small bites such as Duck Prosciutto, Cranberry & Aged Balsamic on Brioche; House-Smoked Sockeye Salmon, Fennel and Crème Fraîche on Buckwheat Blini; Glazed Short Rib with Sweet Onion and Horseradish on Brioche; Smoked Pacific Ling Cod Fritters with Curry Leaf and Lemon Aioli; Crispy Artichoke Tempura with Roasted Tomato Remoulade; and more.

Private Cooking Classes are also available to be booked for groups of up to 12 people that feature an exclusive hands-on cooking class led by chef-instructors that show pairs of participants how to create a starter, main and dessert before enjoying their culinary creations in PICAchef’s waterfront event space with views overlooking False Creek, Granville Island and the Vancouver city skyline.

MARSEILLE MENU: Classic Vichyssoise; Roasted BC Ling Cod; Saffron Fingerling Potatoes; Fennel Sofrito, Crispy Fennel, Chaud Froid de Pamplemousse;
TUSCAN MENU: Tomato Basil Bruschetta, Shaved Fennel, Citrus & Arugula Salad; Handmade Ravioli with Ricotta & Charred Lemon Beurre Blanc; Granita LYON MENU: Soupe à L’Oignon Gratinée (French Onion Soup); Poulet Chasseur (Hunter’s Chicken); Creamy Pommes Purée; Crème Caramel.
