Kim Uncorked: Welcome to my weekly wine recommendation.

Hi, I’m Kim, a passionate lover of wine, food, and any experience that brings the two together! In this weekly blog post, I share my thoughts on a wine that I’ve recently purchased from one of our local independent wine merchants. If you’d like to know more about me, I’ve included a brief bio following the post.

This week’s heatwave had me reaching for one wine: a bright and tangy Sauvignon Blanc. Bursting with vibrant acidity, citrus-driven freshness, tropical fruit flavours, and subtle herbal nuances, the varietal always seems the perfect companion for a hot, sultry day.

Château Roquefort’s 2024 Sauvignon Blanc Les Roches Blanches is a mineral-driven, organic Bordeaux Blanc from the Entre-Deux-Mers region. Crafted from 100% Sauvignon Blanc grown on chalky-clay soils rich in fossilized oyster beds, this wine captures a true sense of place, combining vibrant freshness with a subtle saline character.

Fermented and aged in temperature-controlled stainless-steel vats, Les Roches Blanches preserves the purity and energy of the Sauvignon Blanc grape while letting its limestone-rich soils show through, adding depth, texture, and minerality.

Medium yellow in the glass, the wine opens with classic Sauvignon Blanc aromas of citrus zest, white peach, delicate floral notes, passion fruit, and freshly cut grass. On the palate, it is crisp and lively, balancing ripe fruit flavours with refreshing acidity. Light to medium-bodied, it offers a gently textured mouthfeel and a lingering mineral finish reminiscent of sea spray.

Perfect enjoyed on its own, Château Roquefort’s Les Roches Blanches also makes an ideal companion for summer fare, pairing beautifully with oysters, sushi, ceviche, fresh seafood, and vibrant seasonal salads.
