Krug Week & The Carrot Return to Published on Main
This weekend is the last opportunity to experience one of the most humble ingredients getting the Krug treatment. Krug Week at Published on Main goes from September 11–20.
Each year, Krug’s Single Ingredient program invites Krug Ambassade chefs around the world to explore the creative possibilities of one everyday ingredient. This year’s spotlight returns to the carrot at Published on Main with Chef Gus Stieffenhofer-Brandson, the only Krug Ambassade in Vancouver.
Across seven courses, the carrot takes on an unexpected number of forms and personalities, and transformed into everything from savoury snacks to dessert.

“Returning to the carrot for a second year was an interesting challenge because we wanted to approach it with completely fresh eyes”, says Chef Gus Stieffenhofer-Brandson. It’s an incredibly versatile ingredient that continues to surprise me. Even after building last year’s menu, we realized there were still so many directions we hadn’t explored.”
Each course is paired with an expression of Krug Champagne, including Krug Grande Cuvée 173ème Édition, Krug Rosé 29ème Édition, and Krug Vintage 2013, highlighting the unexpected ways a single ingredient can evolve alongside different cuvées.
