Steel & Oak Dinner Promises Beer-y Good Time
Join Wild Rice on April 23 at 6 p.m. for a ‘beer-y’ good dinner as they welcome Jordon Foss, co-founder of New Westminster’s Steel and Oak Brewing Company and Brew Master Peter Schultz. Chef Todd has designed a special Four-course Dinner to specially complement five of the brewery’s signature craft brews.
Dinner kicks off with an Amuse of Rabbit Tortellini with a salad of baby watercress and orange dressed with vanilla oil. This has been paired with Royal City Ale – a lightly-hopped, medium –body, blonde ale. Red Pilsner (a classic Pilsner comprised of a multitude of caramel malts with a slightly sweet aroma followed immediately by a crisp bitterness that has been described as floral to spicy) has been paired with Chef Todd’s Appetizer of Tempura Scallop with pickle, tartar sauce and honey dust. The crisp floral of the brew balancing the sultry richness of the scallop.
Second Course is a Poached Organic Egg snuggled in a taro root nest and napped with beet foam and smoked shallot salt. This is paired with Steel and Oak’s The Projekt, a seasonal beer consisting of a minimum of three hop varieties. Each Projekt batch exhibits a different flavour profile but all have a core of light malt sweetness and mild bittering.
Bison Slider on a brioche bun accompanied by smoked cheddar, pickled mushrooms and house-made tater tots is the Entrée Course. This course calls for a more robust pairing. Oak & Steel’s flagship brew Dry-Hopped ESB fills the bill. This is a hop-forward beer displaying an aroma of grapefruit and citrus. Its well-balanced malty descent is accompanied by a lingering bitter finish that provides the perfect complement to the bison and cheddar.
Steel & Oak’s Smoked Hefeweizen is the final brew of the night. It is paired with a Dessert of Fresh-baked Pretzel napped with dark chocolate and Lapsang Souchong caramel sauce.
