When Jackie Kai Ellis opened Beaucoup Bakery (2150 Fir Street) four years ago, she did so because of her passion for food. A graphic designer who had no prior professional pastry training, against all odds, she created a French-inspired bakery that is now beloved by many. As Beaucoup heads into its fifth anniversary, Ellis is passing the torch to longtime staff, sister-brother duo Betty Hung and Jacky Hung.
“I’m proud of all that I have achieved with Beaucoup Bakery and as I enter my next journey in life, it seemed almost destined that Beaucoup Bakery go to Betty and Jacky,” explains Ellis, whose next project is her debut memoir, The Measure Of My Powers, publishing spring 2018. “Betty, a former designer too, had little formal food training much like myself. She barely knew how to open a commercial oven and, with determination, overcame every challenge, eventually becoming the head pastry chef. Jacky, came and went as a barista, his time dotted with his studies until eventually he came to realize that nothing made him happier than being at Beaucoup Bakery, chatting with the regulars and immersing himself in his passion for coffee. I look forward to being a patron of the next generation of Beaucoup Bakery.”
Hung has been running the Beaucoup kitchen for the past couple years as head pastry chef, working with Ellis to finalize new and seasonal pastries, as well as maintaining the standard of pastries customers have come to know. She interned at Beaucoup Bakery when it first opened and worked her way up, receiving one of Beaucoup Bakery’s scholarships to Paris and trained at famed École Gastronomique Bellouet Conseil.
“It truly is a dream come true to now be the owner of Beaucoup Bakery with my brother, Jacky,” says Hung, who also runs a food blog called Yummy Workshop, where she photographs and writes about her baking experiments. “I first started baking in high school. Baking is therapeutic and allows me to better myself because we are constantly trying to make better pastries and new creations, and that takes a lot of trial and error. It is all worthwhile when we receive wonderful compliments from our guests.”
Customers can expect the same Beaucoup Bakery as they have always loved. However, Hung does hope to develop the menu further in the future with even more interesting pastries.
“We are committed to continuing what Beaucoup has started – to inspire with quality and care,” adds Hung. “My team and I are excited for what’s to come. We hope our customers, old and new, are equally as excited to experience this next chapter of Beaucoup Bakery with us.”
