Fufú Café opens Vancouver’s first-ever all Japanese soufflé pancakes destination
Fluffy, cloud-like, and wobbly. The global and edible phenomenon that is the Japanese soufflé pancake makes its way up north with the arrival of Fufú Café (1266 West Broadway) – Vancouver’s first destination to exclusively feature both sweet and savoury creations of the buttery, airy delicacy.
Owned and operated by childhood friends and local culinary entrepreneurs Vicki Chen and Sienna Gan, the whimsically designed 20-seat, 1,040 square feet space is expected to grand open in early September.
“We fell in love with the soufflé pancake on a visit to Japan and couldn’t find anything like it in Vancouver,” says Chen, an interior designer who personally designed the Fufú Café space and brand. “When done right, soufflé pancakes are extremely light and delicious. It doesn’t feel heavy at all and simply melts-in-your-mouth. The key is to ensure you are patient and cook it properly. Then, to enjoy it immediately. We can’t wait for guests to start trying our version of the soufflé pancake.”
Fufú Café’s made-to-order Japanese soufflé pancakes each take about 15 to 20 minutes to make. The menu features sweet options such as:
butter, maple syrup, “Fufú” icing sugar or sea salt mascarpone cheese whipped cream
Matcha Mochi
shiratamako balls, housemade matcha sauce, matcha whipping cream, double chocolate raspberry ice cream, white chocolate flakes, matcha flakes
Mixed Fresh Fruit
mixed fresh fruit, classic whipped cream, dried raspberry flakes, icing sugar
Earl Grey Milk Tea & Tapioca Pearl
housemade earl grey tea sauce, tapioca pearl
poached egg, thick-sliced smoked salmon, housemade avocado sauce, sliced avocado, fresh organic greens salad
Eggs Benedict
two poached eggs, housemade hollandaise sauce, and choice of local pork sausage or bacon, fresh organic greens salad
Guests may also find seasonal flavours such as Caramelized Banana & Nutella, Tiramisu, and Crème Brûlée on a rotating basis.
At the coffee bar, guests can order from a range of hot and iced espresso-based beverages, tea lattes, brewed and fresh milk teas, cheese foam fruit tea and fresh fruit sodas to pair with the pancakes.
“We want people to be able to take a breather from the business of every day, sit and enjoy each other’s company, all the while savouring our made-to-order pancakes in our beautiful café,” adds Gan.
The space is influenced by modern French-style aesthetics, featuring soft and light pastels colours, artwork and textures.
Fufu Café will be open seven days a week from 11 a.m. to 10 p.m., first-come, first serve. Soufflé pancakes start from $11.
