Canada’s Premier Chinese Restaurant Mott 32 Vancouver Reopens
Award-winning Mott 32 Vancouver reopens for fine dining Chinese cuisine with a focus on sustainability, tradition, and local ingredients – principles that have guided the global brand.
Mott 32 Vancouver has reopened for dinner service. The award-winning team welcomes guests back for world-renowned Chinese cuisine just in time for Lunar New Year.
“Vancouver is so aligned with our sustainability and ethical sourcing values and has such a great abundance of top-notch ingredients for the team. It makes so much sense for us to be here, and we’re looking forward to working with those local suppliers again here,” shares Malcolm Wood, co-founder of Hong Kong’s Maximal Concepts, the company behind Mott 32.
Mott 32 Vancouver originally opened in 2017 as part of a global brand that now also operates in Hong Kong, Las Vegas and Singapore, with soon to open locations in Bangkok, Dubai and Seoul. The restaurant that temporarily closed in August 2020 is now set to reopen and operate independently from the not-yet-announced new hotel operator that will manage the adjacent tower. The restaurant has received a number of accolades, including securing a spot on Canada’s 100 Best Restaurants 2020 At Vancouver Magazine’s 2020 Restaurant Awards, it was awarded Best Chinese (restaurant), and Robert Stelmachuk, Wine Director, took home Sommelier of the Year.

To Eat and Drink
Mott 32 presents a forward-looking approach to Chinese cuisine founded with deep respect in tradition and ethical sourcing. Diners can expect to explore a menu of traditional Cantonese dishes prepared with a modern flair along with nods to other regional cuisines of China. At Mott 32, premium ingredients and uncompromising quality propel the time-honoured techniques and dishes.
Mott 32 Vancouver Executive Chef, Hongwei He, helms the kitchen and executes signature Mott 32 recipes designed by acclaimed Chef Lee Man Sing along with locally inspired renditions. He looks forward to showcasing local ingredients and curating dishes exclusive to the Vancouver location that celebrate the regional bounty. He is supported by Jian Hui Li, Dim Sum Chef, who is celebrated for his knowledge of Northern Chinese cuisine and recognized as one of Vancouver’s most innovative young dim sum chefs. Chef Chen Sheng Hu comes out of retirement to oversee the Mott 32 barbeque offerings as BBQ Chef.
Diners worldwide have long celebrated the famed Mott 32 Apple Wood Roasted Peking Duck. The locally-raised duck takes 48 hours to prepare and is expertly carved for patrons tableside. Other menu highlights include the Barbecue Pluma Iberico Pork with yellow mountain honey and a siu mai complete with a soft quail egg center, Iberico pork and black truffle. Black Cod Dumplings and the Hot & Sour Iberico Pork Shanghainese Soup Dumplings are additional must-try plates.
The restaurant boasts an expertly curated wine list and signature cocktails. “We’re redefining Chinese cuisine in Vancouver and the way people think about wine and those flavours,” shares Robert Stelmachuk, Wine Director. Stelmachuk maintains Mott 32’s wine cellar of over 300 labels, which includes rare vintages and prestigious large formats ideal for celebrations. The restaurant plans to resume its well-attended Wine Adventure Reservations soon after reopening. Mott 32’s cocktail program spotlights a variety of Asian ingredients including chrysanthemum, osmanthus honey, ginseng, and star anise.
The Space
Created by award-winning designer Joyce Wang, the space showcases traditional Chinese influence with prominent design elements including marble, wood, glass and leather. Murals, custom wallpaper and Victorian chandeliers romantically nod to a past era. Bird cage booths and wall dividers create a sense of privacy and mystery throughout the restaurant which has five private dining rooms. The open concept kitchen offers views of chefs manning the traditional stations.
Hours of Operation
Now in its soft reopening phase, the restaurant is open Sunday – Thursday 5:00pm-10:00pm and Friday – Saturday 5:00pm-10:30pm
