Italian cuisine week 2023 in Canada

Five chefs and three masterclasses streamed for the Italian Cuisine Week in Canada: this
is how ITA and Confartigianato promote regional cuisine and 65 agri-food companies

From 13 to 20 November, five chefs will be in the spotlight in four masterclasses, 3 of which will be streamed, as part of Italian Cuisine Week 2023 in Montreal, Toronto and Vancouver. The initiative is organized by the Italian Trade Agency (ITA) in Canada in collaboration with
Confartigianato and has a dual purpose. On the one hand, it aims to celebrate the now traditional global event promoted by the Ministry of Foreign Affairs and International Cooperation, suggesting recipes with quality authentic Italian ingredients to the general public connected online. On the other hand, it wants to bring catering and trade operators closer to a virtual delegation of 65 companies from Emilia Romagna and Calabria, interested in entering the Canadian market and contained in an online catalog created for the occasion. The companies have already been invited to meetings with Canadian importers during a purchasing mission in September 2023 which landed in Rimini and Lamezia Terme.

“We are happy to be able to contribute to the Week of Italian Cuisine in Canada with three events open to the general public and which at the same time wink at commercial operators, urging everyone to make wider and better use of authentic Italian foods and to look for new
sources of supply, both here and in Italy” declared Marco Saladini, director of the ITA offices in Canada. “I thank those who helped organize the masterclasses and I wish everyone…buon appetito!” he concluded.

Here, event by event, is the program that awaits guests live and online. In Montreal, the starred chef Caterina Ceraudo from Calabria and chef Pasquale Vari, a well-known face in Quebec and of Calabrian descent, will highlight the essentiality and refinement of the Region’s poor cuisine. The unprecedented Calabrian duo will introduce the evolution of Calabrian cuisine based on the cultural, geographical and productive heritage of the region and on the simplicity and authenticity of the ingredients. The event will air live on November 13, 2023 at 10:30 am EST on a dedicated YouTube channel.

In Toronto, chef Luciano Schipano, President of the Italian Chefs Federation in Canada, will give visibility to the variety and abundance of authentic Emilia Romagna ingredients in his dishes. The Protected Designations of Origin and Protected Geographical Indications in the
northern Italian region are in fact 19 and 25 respectively. The event will be held on November 14, 2023 at 10:30 EST in live streaming on a dedicated YouTube channel. The chef will hold a second masterclass at Seneca College in Toronto, reserved for students and other
professionals, on November 20th.

In Vancouver, chef David Azzi, known for his dishes in line with the Emilian tradition, and chef Mark Massicotte, who is also a sommelier and teaches at the Vancouver Community College, will create three typical recipes. The history of Emilian gastronomy, known throughout the world for its abundant and tasty preparations, is closely intertwined with that of the many powerful families that ruled its territory, whose courts were served by famous and imaginative chefs. The event will be held on November 16, 2023 at 10:30 am PST live streaming on a dedicated YouTube channel.
