Culinary Team Canada Hosts Exclusive Fundraising Dinner
at Carve Kitchen + Meatery, Naturally Pacific Resort
On Monday, November 3, 2025, Culinary Team Canada will take over Carve Kitchen + Meatery at Naturally Pacific Resort for an unforgettable evening of food, wine and community spirit – all in support of the team’s training and fundraising for two major international competitions. The team will first compete at ExpoGast 2026 in Luxembourg, followed by the ultimate test at the World Culinary Olympics in Stuttgart, Germany in 2028, facing the best teams from over 35 countries.
Guests will enjoy a spectacular five-course menu designed and prepared by Team Canada chefs, supported by the Carve Kitchen & Meatery team, highlighting local ingredients and innovative techniques that showcase Canada’s culinary artistry on the world stage.
The evening’s menu includes:
First Course
Halibut and Lobster Terrine
with Butter Poached Baby Turnips, Cabbage and Leek Roll, Oyster Cucumber Salad,
Braised Onion and Sake Kasu Cream
Second Course
Vegan Mushroom and Smoked Tofu Wellington
Celeriac Flan, Heirloom Carrots, Mushroom Umami Sauce
Entree
Spiced Honey Glazed Duck
Duck Terrine, Variations of Squash, Morrel Mushroom Choux, Carrot Confit,
and Duck Garum Jus.

Apricot Pear Yogurt Mousse with Caramelia Ganache
Warm Poppy Seed Pain Perdu with Sabayon, Buttermilk Sherbert, Labrador Tea Poached Pear with Apricot and Pear Compote

Tickets are $140 per person, inclusive of taxes and fees. Wine and additional beverages will be available for purchase. All proceeds will directly support Culinary Team Canada’s preparation for these two international competitions.
