Desi Indian Lounge Executive Chef Bal Ajagaonkar is shining a light on fresh, local and seasonally informed ingredients as part of his new Chef’s Spring Tasting Menu now available at the popular dining destination centrally located in the heart of Downtown Vancouver at 1355 Hornby St.

 

Offered exclusively for 6 p.m. seatings Thursdays to Saturdays, Ajagaonkar’s new fresh-sheet feature menu incorporates a variety of produce and proteins thoughtfully sourced from foragers, fishers and from farm markets around BC all paired in perfect harmony with his classical technique, modern restraint and dedication to the depth and diversity of regional Indian cuisine.

 

The five-course, prix-fixe Chef’s Tasting Menu is $75 per person plus tax and gratuity with optional Old- and New-World wine pairings also available for an additional $30++ and showcases such inspired East-by-way-of-West-Coast dishes as Asparagus Shorba, Tandoori Brussels Sprouts, Tamarind Sablefish, Cornish Hen and a Golden Beet & Paan Mousse.

Ajagaonkar has also added new items to the à-la-carte menus available daily for lunch and dinner from 11 a.m. to late that showcase local ingredients, exotic flavours and uniquely regional Indian inspiration in such appetizers as Bombay Pomfret Fry (semolina-coated whole fish, fried with Bombay spices) and Samosa Kale Chat (samosa, chickpeas, chutney, silky yogurt, crispy kale, crunchy sev), Tandoori specialties like BC Organic Portobello Mushroom (tandoori spices, yogurt, stuffed jackfruit mix) and BC Coho Salmon (tandoori spices, green chutney), Vegetarian and Non-Vegetarian Curry dishes that include Lamb Madras (lamb cooked in coconut sauce with Madras spice and tamarind essence) and Konkani Pacific Prawns (prawn, chili coriander coconut sauce, kokum petals) as well as Indian Breads, sides, desserts and more.

 

Ajagaonkar, who was born in the coastal town of Malvan in Western India and trained in luxury hotel kitchens and alongside Michelin-recognized chefs internationally, brings a disciplined, technique-driven approach to Desi’s kitchen. His cooking balances regional authenticity with refined plating and layered spice work favouring clarity, depth and harmony over excess.

 

Opened in 2025, Desi Indian Lounge has quickly carved out a reputation for highlighting the bold and vibrant flavors of India in dishes that are deeply rooted in tradition yet crafted with a modern touch and presented with understated flair in a cozy, inviting space where culinary excellence meets heartfelt hospitality.

 

Desi Indian Lounge is owned by Deepak Khanchi, who was born into a hardworking farming family in his Indian homeland and leaned on the values of hard work, hospitality and community that were imparted in him at a young age to inform his approach to service, cuisine and style at Desi Indian Lounge. Prior to opening Desi, Khanchi opened Desi Turka Indian Cuisine in Burnaby, which quickly became a favourite of locals and visitors thanks to its authentic approach to Indian fare and warm, welcoming atmosphere. Desi represents the next chapter in his hospitality journey — a place where tradition meets innovation and guests can savour the richness of Indian cuisine in a contemporary, stylish enclave.
