SUYO Modern Peruvian and Folietta unite for the next
‘SUYO con Amigos’ Dinner – September 10
Chefs Ricardo Valverde and Bobby Milheron collaborate to present an eight-course tasting menu celebrating Peruvian and Italian flavours, friendship, and culinary creativity
On Thursday, September 10, SUYO Modern Peruvian welcomes Chef Bobby Milheron, Culinary Director of Restaurants for Wentworth Hospitality, for the latest edition of SUYO con Amigos— an ongoing chef collaboration series celebrating friendship, creativity, and the exchange of culinary ideas. Wentworth’s restaurant portfolio includes Tableau Bar Bistro, Homer St. Cafe & Bar, Maxine’s Cafe & Bar, and its newest Italian restaurant, Folietta.
Launched in 2024, SUYO con Amigos was created to bring together some of British Columbia’s most talented chefs for one-night-only dining experiences that celebrate collaboration over competition. Each dinner gives participating chefs the freedom to explore new techniques, challenge one another creatively, and present a menu that exists for one night only.

While Chef Bobby Milheron has helped shape the culinary direction of Wentworth Hospitality’s restaurant portfolio for several years, Folietta holds a special place among its newest ventures. Located near Vancouver’s Little Italy neighbourhood, the restaurant draws inspiration from Italy’s regional cuisines, West Coast ingredients, and Milheron’s travels throughout Italy.

“Some of the best ideas come from cooking alongside people who see food differently than you do,” says Valverde. “Bobby and I both care deeply about seasonality, technique, and creating memorable experiences for our guests. Bringing our Peruvian and Italian influences together will spark a conversation on the plate that celebrates both our culinary traditions while creating something entirely new.”
