Columbia Valley AVA, Washington State

Vineyard Notes:
Primarily high elevation, cool, rocky silty loam, south aspect
Processes:
Night harvested, destemmed, crushed, and pressed immediately. Moderately cool fermentation in stainless steel tanks using Prise de Mousse yeast. Filtered cold after bentonite fining.
A note on the wine:
The winemaker’s favourite. Get a 2nd bottle on ice, enough said.

40 year old vines, hot, fine sandy loam, south aspect
Processes:
Night harvested, destemmed, crushed, and pressed immediately. Moderately cool fermentation in stainless steel tanks using Prise de Mousse yeast. Filtered cold after bentonite fining.

More old world than the old world. This is an elegant wine.
