TASTING NOTES
In honour of the North Star so prominent and bright in our sky, which has guided ships at sea for
centuries, seven stars POLARIS is a shining star in our sparkling program. Inspired by the brilliance of
Polaris, this sparkling gem is meticulously crafted using the traditional Méthode Champenoise style,
capturing effervescence through a secondary fermentation. This prise de mousse process, imparts
enchanting aromas of freshly baked biscuits, elevating the wine’s inherent brightness with notes of Granny Smith apple, peach, and lime. The creamy mousse contributes to a lusciously full-bodied character and well-balanced composition culminates in a crisp, clean finish, creating a celestial experience that pays homage to the celestial guide, Polaris.
STYLISTIC NOTES
Radiant and refined, seven stars POLARIS is a Blanc de Blancs Brut crafted from 100% unoaked
Chardonnay. The grapes are hand-harvested at optimal natural acidity, which is carefully preserved
through extended bottle aging. Sourced from two exceptional South Okanagan vineyards, Hidden Terrace
in north Oliver contributes rich phenolic ripeness, while our estate vineyard on the Naramata Bench
imparts bright acidity and vibrant freshness. Aged en tirage for 21 months to develop delicate autolytic
notes, the wine was then riddled, disgorged, and finished with our proprietary dosage, adding layered
complexity and finesse. Following disgorgement, POLARIS was bottle-aged for an additional 18 months,
resulting in an elegant, beautifully balanced sparkling wine with depth, vibrancy, and lasting grace.
FOOD PAIRING
POLARIS is ideal for celebrations as well as sipping with hors d’oeuvres, oysters, a creamy Bleu d’Avergne
or Cambozola cheese.

TASTING NOTES
Named in honour of the brightest star gracing our evening skies, Sirius is the crown jewel in our seven
stars sparkling wine collection. Crafted in the traditional Methodé Champenoise style, this resplendent
Brut effuses a lively spirit, unveiling aromas reminiscent of freshly baked brioche with a complex and
intense autolytic character derived from the extended aging on lees. A pristine palate of baked apple and
honeycomb flavours show against a delicate, creamy and soft mousse, underscored by a distinct, cleansing acidity. Nuanced and luminous, Sirius is a beautiful reflection of its distinctive terroir and will cellar well for years to come.
STYLISTIC NOTES
Our Sirius blend is crafted from Chardonnay and Pinot Noir, harvested, pressed, and co-fermented
together. We employ a gentle pressing program, separating the finest free-run juice into a cuvée lot,
ensuring only the most elegant, pure juice is used for Sirius. This approach creates a sparkling wine with
delicate finesse, refined aromas, and remarkable aging potential. The wine was left en tirage for 60 months to develop its complex character and soften its bright acidity. After traditional riddling, it was disgorged and finished with a proprietary dosage, carefully designed by our winemaker to enhance depth, texture, and complexity. The wine then spent an additional two years aging in bottle before release, resulting in a beautiful sparkling wine with layers of nuance and a refreshing, balanced palate.

SOUTH LANGLEY VINEYARD
The grapes for our Sirius sparkling wine are sourced exclusively from our South Langley Estate vineyard. A truly special site, offering a distinctive microclimate. Planted over 20 years ago, the property sits just two miles north of the Canada–US border at 49° latitude, the same latitude as Champagne, France. The temperate, coastal climate of this area is ideal for cultivating cool-climate grape varieties, producing fruit with naturally low brix and vibrant acidity. Compared to Vancouver, this Geographical Indicator (GI) receives 30% less rainfall, with warmer summers that foster consistent, even ripening. The vineyard is dry-farmed, and thanks to its mild growing season, frost is rarely a concern. This results in fruit that ripens uniformly year after year, offering beautifully balanced juice with optimal sugar, acid, and phenolic development
Notes from winemaker Mary McDermott
Another harvest season has come and gone, and what a whirlwind it’s been! This year marked our second-largest harvest ever, bringing in 232 short tons of fruit. Despite a cool, wet spring that delayed bud break and flowering and some early disease pressure, the warm, dry summeraccelerated ripening beautifully. By late August, we began picking sparkling wine fruit in Naramata, and the pace never slowed. With strong yields across the board, we increased our intake of white and sparkling wine grapes to balance lighter vintages from the past two years.
We also welcomed exciting new varieties, Roussanne, Auxerrois, and Rotberger which will enhance future blends and our Rosé program. As we celebrate another successful vintage, we’re thrilled to share our newest releases for the holiday season. The 2017 seven stars SIRIUS Late Disgorged was made with the same technique as the above. The wine was left en tirage for 72 months (an additional 12 months) to develop its complexity and soften its bright acidity. The additional year added to the autolytic character. After traditional riddling, it was disgorged and finished with a proprietary dosage.
