New Restaurant Offers Share Plates Comprising Locally Sourced, Sustainable Ingredients, Full Wine and Bar Program and Modern-Country Farmhouse Décor
A new upscale dining experience brings the best of the Pacific Northwest to the heart of Sea to Sky Country today as The Salted Vine Kitchen + Bar officially opens its doors at 37991 Second Ave. in historic downtown Squamish.
A collaboration between Executive Chef Jeff Park and Restaurant Director/Sommelier Pat Allan, industry veterans and longtime colleagues at Whistler’s award-winning Araxi Restaurant + Oyster Bar, The Salted Vine offers up a menu of contemporary Pacific Northwest cuisine in a modern-country farmhouse setting that pays homage to the pioneering spirit of Squamish’s earliest incarnation as a railway terminus and logging outpost.
Allan, a staple of Whistler’s restaurant scene for the better part of three decades, most recently served as Araxi’s restaurant manager and sommelier, while Park, who began his career at Araxi in 2003 — before leaving in 2007 to head up the back-of-house operations at Calgary’s Blink Restaurant & Lounge and Chef’s Table at Kensington Riverside Inn — returned to his roots at the resort-town restaurant in 2011 for another four-year tour as chef de cuisine.
Park’s menu features an ever-changing array of seasonal, organic and sustainable ingredients cultivated from such local purveyors as Brackendale’s Nutrient Dense Farms, Squamish’s Stony Mountain Farm and Pemberton’s North Arm Farm, Across the Creek Organics and Rootdown Organic Farm. The Salted Vine’s seafood selections are all Ocean Wise-approved, while naturally raised beef and lamb is sourced from Cache Creek and Pemberton, BC, and Peace Country, Alberta respectively.
Beyond a comprehensive list of wines from BC and around the globe, The Salted Vine Bar Manager and fellow Araxi alumnus Dave Warren will shake up a selection of handcrafted cocktails that feature fresh-squeezed juices, berries and tinctures named after popular local climbing routes and bike trails.
In terms of design, The Salted Vine’s 70-seat dining room and lounge and 20-seat patio — which takes centre stage in the town’s oldest building, the Squamish Hotel, constructed in 1910 — features an abundance of natural light, locally stained and reclaimed fir wood panels, tables and a bar top as well as serving platters, dishware and works of art created by a number of local artisans.
“We’re excited to introduce a new upscale dining experience to Squamish,” says Allan, who, along with Park, resides in the community. “Jeff has assembled an impressive menu that highlights the very best of the Pacific Northwest and we’re thrilled to welcome our friends, neighbours and visitors through our doors to see what we have to offer.”
The Salted Vine is open for dinner service Tuesday through Saturday from 5 p.m. to 10 p.m. with lunch and weekend brunch service launching in the fall.
