Traditionalists will love the Brown Butter Roasted Squash Soup, Honey Roasted Fraser Valley Turkey with all the trimmings and a seasonal ‘pumpkin spice’ twist on Pastry Chef Liz’s drool-worthy choux à la crème. Diners looking for some variety will find delicious options in a seasonal salad, Roasted 63 Acres Beef Tenderloin, Pan Seared Little Cedar Falls Steelhead and more.

Recipe: Chef Stacy’s Perfect Turkey
Chef de Cuisine, Stacy Johnston shares her pro tips for roasting the holiday bird. “As a restaurant chef, I’m often asked ‘how to make the perfect holiday turkey’,” she shares. “Having roasted many a bit, I’ve learned two essential steps that always make for a luscious, juicy and flavourful result – the first is brining, and the second is lining the underside of the skin with butter and sage.”

Recipe: Pastry Chef Liz’s Squash and Pumpkin Pie
Pastry Chef Liz Stevenson dishes on one of her holiday dessert staples – roasted squash and pumpkin pie. “This recipe is really versatile and works with a variety of squash,” says Liz. “Use with your favourite pie dough, or simply bake on its own as a spiced pumpkin custard.” Break out some vanilla ice cream or whip up some cream for an easy and delicious pairing.
