Acre Through the Seasons announces new Dinner Series 3, Oceans
Immerse yourself in uber-local cuisine at Club Versante’s fine dining treasure, now through February 2024
Hot off its recent mention on the longlist for Canada’s Best New Restaurants 2023 by Air Canada enRoute, Acre Through the Seasons proudly announces its latest seasonal dining experience: Series 3, Oceans. A journey through the pristine oceans of the Pacific Northwest evoke the smells, tastes, textures and memories of this particular terroir. Uniquely, Acre Through the Seasonsalso draws from the year-round bounty of its own private farm-greenhouse, Acre Lavande, on Cortes Island, bringing the essence of both land and sea to contemporary plates.
In a three-part series, starting from woodsy forest and game, to the sweet harvest of summer and finally to the pristine Pacific Ocean, Executive Chef William Lew’s and Restaurant Chef Lemuel Tsang continue to explore the depths of regional culinary innovation. The soothing, neutral palate of the luxe dining room is an ideal canvas for the seasonal décor and flourishes of each chapter.
Series 3, Oceans, starts as the previous journeys have: with snacks that surprise and delight, giving a taste of things to come. An oyster is elevated by kimchi cream, caviar and seaweed; an iconic fish tartare changes its variety weekly, with Pacific Rim flourishes like yuzu kosho and shiso anchoring it to the seaside. The rare, exclusive taste and texture of uni is made unforgettable with Wagyu fat, charcoal bread and ponzu sauce.
First bites are followed by five delicate, savoury courses featuring smoked steelhead trout mousse, octopus, prawn and scallop with squid noodles, lobster, and finally sablefish with clam velouté. This ocean-inspired feast is capped off with a dessert evoking fruits of the earth, with a persimmon tart accented by bergamot and quince flavours, enveloped in creamy white chocolate bavarois.
Since vegetarians are not only accommodated, but celebrated, at Acre Through the Seasons, an equally inspired seafood-free seasonal menu is also on offer, allowing all diners to enjoy a similar sensory experience. Solo diners are also more than welcome: choice spots at the Chef’s Counter are available, as are single-seat tables, by request.
The Series 3, Oceans menu at Acre Through the Seasons is $120 per person, and available from Thursday to Sunday, with reservations available from 5 pm to 8:30 pm (last reservation; allow approximately 2.5 hours for this dining experience).
