One of Vancouver’s most anticipated seasonal dining experiences is about to return to H Tasting Lounge (HTL) at The Westin Bayshore, Vancouver.

Beginning November 1 through March 16, 2025, Winterlust will once again grace the stunning patio of HTL. Winterlust consists of five private translucent domes, each of them luxuriously adorned with seasonal evergreen elements and Alpine-themed accents to create a glamorous atmosphere. Designed with panoramic glass paneling, the domes offer breathtaking views of the North Shore mountains and Coal Harbour’s expansive waterfront. Accommodating up to six guests each, they are fully equipped with heaters and fresh-air circulation to keep the chill of autumn and winter at bay, as well as independent sound systems that further ensure a comfortable, intimate and personalized dining experience.

New and returning guests will be thrilled by the gourmet multicourse menu options created by HTL’s extraordinary culinary team. Dishes include chili-caramel pork belly with fresh herbs and togarashi sesame-cashew crunch; certified Angus beef tomahawk accompanied with red wine jus, confit fingerling potatoes, sautéed garlic mushrooms, and five-spice roasted root vegetables; and a choice of four premium caviar services, each complete with sour cream blinis and crème fraîche.

The showstopping chilled seafood tower (designed to serve two or four guests), boasts an assortment of Dungeness crab legs, poached tiger prawns, Manila clams, Salt Spring Island mussels, smoked salmon candy, albacore tuna tartare, sesame coconut crackers, wakame seaweed salad, and classic condiments of freshly made horseradish, lemon wedges and cocktail sauce. Or opt for the equally bountiful West Coast seafood boil, offering a tantalizing variety of Dungeness crab legs, Manila clams, mussels, prawns, lobster tails, Kombu garlic butter and parsley.

Dessert highlights include HTL’s Indulgent Chocolate Cake with Manjari dark chocolate ganache, Chantilly cream, salted toffee, and Bayshore honeycomb, as well as Pastry Chef Martha Ebro’s Pistachio and Candied-Orange Tiramisu.
