🍲 BC Crab & Smoked Tomato Chowder – Black Pepper Lardons, Herb Creme Fraiche & Frybread Dipper
💬 Head Chef Heat Laliberte, a Red Seal-certified Dene-Métis chef with over 20 years of experience, has worked at Fairmont Pacific Rim and the Olympic Games. A graduate of the ACCESS Trades Culinary and Entrepreneurship programs, he now leads Friendship Catering, a social enterprise supporting the Vancouver Aboriginal Friendship Centre Society. Chef Laliberte’s mission is to highlight traditional Indigenous foods and provide premier culinary experiences, from breakfast to plated dinners, while reinvesting profits to support Vancouver’s Urban Indigenous community. Friendship Catering proudly offers a menu celebrating Indigenous ingredients, seasonal nuances, and time-honoured techniques, including in-house maple smoked bacon, bison blueberry sausage, and pickles, while also serving over 3,000 nutritious meals weekly to local shelters.

🍲 GEODUCK CHOWDER
💬 After graduating from SAIT’s Culinary Arts program at 21, Jonah worked his way up to Chef de Cuisine at some of Calgary’s busiest restaurants, most notably Alloy under Chef Rogelio Herrera. He is now Chef and Owner of Bar Bravo in Vancouver, serving globally sourced sustainable seafood with a focus on a dry-aged fish program. Outside the kitchen, Jonah enjoys spending time with his wife and two children at local parks.
