Beloved tapas bar Pax Romana is warming up for spring by debuting a fresh new menu of Mediterranean-inspired small bites, share plates & hand-crafted cocktails available now at the East Vancouver hotspot located at 1670 Commercial Drive.
Launched in late 2023 by the team that’s also behind Loula’s Taverna,, a pair of sister Sopra Sotto locations in East Vancouver and Burnaby andClau
Pax Romana’s new food menu is paced by a trio of Charcuterie Boards that feature a choice selection of Meats (mortadella and bresaola from Italy, saucisson from France, Iberico chorizo and jamon from Spain and locally made chicken liver parfait) and Cheeses (Italian Ubriaco or baked Fontina, French Mimolette or Etorki, English Shropshire blue, Swiss Tête de Moines, Spanish sherry cask Manchego and BC farmhouse goat), served with house-made jams and pickled vegetables.
Beyond Mediterranean Snacks and Bites like Warm Tangerine Chili Olives, Marcona Almonds, Pan con Tomate and the classic Gilda Pintxo, guests can also enjoy new Plates that include the following:

Decadent desserts also make their mark on the menu, with highlights like Sorbetto al Limone; Chocolate Mousse & Chantilly (pomegranate, toasted quinoa, candied zest, pistachios, fried roses, basil); rotating flavours of Basque Burnt Cheesecake; and hand-picked Sherry Pairings (Saint Agur Bleu cheese, Marcona almonds, honeycomb, 2 oz Lustau medium cream sherry).
Pax Romana’s bartending team has also conjured up a new list of spring cocktails that include the smoky ‘Port of Spain’ (400 Conejos mezcal, orgeat, lime, Angostura), tart & tropical ‘Five Wounds’ Daiquiri (Panarubers, passion fruit cordial, lime), nutty & aromatic ‘Kojo’ (Tanqueray, Oloroso sherry, falernum, aromatic bitters), and silky ‘Reverse’ Manhattan (Diplomatico, Amontillado sherry, vermouth, bitters), among others.
The bar menu also keeps Pax Romana’s popular trio of signature cocktails — floral Pax Martini (Tanqueray no. 10 gin, Sheringham Seaside gin, rose vermut, fino sherry), buzzy & bold Pax Espresso Martini (dark rum, butter, crème de cacao, Kahlua, espresso) and bitter & nutty Pax Negroni (Bombay Sapphire gin, Campari, sherry blend, vermut) in the spring rotation as well as a wide selection of rich, sweet Vermut, Sherry sourced from the south of Spain and bittersweet, herbaceous Amari and free-spirited, zero-proof mocktails and non-alcoholic beverages.
Pax Romana hosts two rounds of Happy Hour Thursday to Saturday from 5 to 6 p.m. and 10 p.m. to midnight as well as all day every Sunday with a food menu that features Gildas and Pan con Tomate for $3 each, Mixed or Warm Tangerine Chili Olives or Marcona Almonds for $6 and an Iberico Sandwich (chorizo, Gruyere, garlic aioli, honey, Dijon, chili oil) for $16 each among other bites, and a drink menu showcasing Estrella Draught Lager for $5, a choice of House Vermut, Sherry or Amaro for $8 each, Red or White Wine & Prosecco for $10 each and Pax Negronis, Pax Martinis, Pax Espresso Martinis and Vermouth Spritzes for $12 each.
