March 22nd, April 12th, May 10th & 31st
Award-winning Copperpenny Distilling Co. will welcome Downtown Vancouver tide-to-table destination Fanny Bay Oyster Bar and Shellfish Market to host a new series of Sunday Shucking Pop-Ups this spring at the North Shore craft distillery (103-288 Esplanade E Avenue).
The popular events will take centre stage at Copperpenny on March 22nd, April 12th, May 10th (Mother’s Day) and May 31st from 2 to 7 p.m. and delight both oyster aficionados and cocktail enthusiasts alike in the distillery’s luxe lounge centrally located in the Lower Lonsdale Shipyards District of North Vancouver.
During each pop-up, Fanny Bay master shucker Hannah Nguyen will serve up premium oyster varieties and seasonally inspired Shucker’s Choice selections for $21 a half dozen or $39 a dozen, while the Copperpenny bar team will offer a curated menu of gin-based libations created especially for the occasion.
The events will also serve as a showcase for Copperpenny’s BC Food and Beverage Product of the Year winning and first-of-its-kind-in-Canada No . 006 Oyster Shell Gin, handcrafted using shells harvested from the rocky shores of the restaurant and shellfish market’s eponymous oyster farm in Fanny Bay on Vancouver Island. The rare gin expression uses BC ocean elements during the distillation process to create a wonderfully savoury gin with bright citrus notes ideal for martinis and seafood pairings.
Guests can also enjoy Copperpenny’s Lost Horizon Rare Tea Gin and Ember BC Pine Smoked Gin varietals that brought home three gold medals from the The Spirits Business Global Gin Masters 2025 competition in London, England late last year. Lost Horizon also grabbed the gold medal in the Contemporary Gin category at the Artisan Distillers Canada 2025 Canadian Artisan Spirit Competition in April of 2025.
Elegantly dry, luxurious and exotic, Lost Horizon Rare Tea Gin is a beautifully contemporary dry gin that incorporates a rare loose leaf Ceylon tea as the leading botanical finish to impart orange blossom and vanilla notes, while tannins from the tea leaves deliver a beautiful amber colour. Ember BC Pine Smoked Gin is born from the pristine waters of BC and made with select BC wheat and a thoughtful blend of locally foraged and European juniper, with each batch emboldened with gentle smoke from coastal pine to capture the terroir of BC and the true soul of a West Coast autumn and winter.
