FRESH HOOK-AND-LINE CAUGHT HALIBUT SPECIALS FROM TULALIP KITCHENS THIS APRIL AND MAY

Tulalip Resort Casino restaurants are cooking up a halibut storm starting April 3 through May 31 in celebration of the 2017 halibut season. Working with local fish suppliers for the freshest fare available, Executive Chef Perry Mascitti and his culinary team are planning to offer only the best catch in town for their guests.

“My chefs are anxiously awaiting the first catch to come into port,” says Executive Chef Perry Mascitti. “All of the chefs are very excited about their new menu offerings and have been busy for months creating halibut centered entrées and salads in anticipation for the 2017 halibut season.”

The halibut served during the celebration is caught using the sustainable hook-and-line method of fishing for the best possible handling of this prized fish. What results for the diner is a flavorful, fresh line caught Prosciutto Wrapped Halibut with smoked corn puree and corn jus spheres at Tulalip Bay, for example, or the Flame Grilled Pacific Halibut with sun-dried tomato-pesto and sweet pea puree at Blackfish Wild Salmon Grill. Journeys East will also be offering Fried Halibut Medallions with XO Sauce.
