Executive Chef Ricardo Valverde Adds Inventive Caviar-Driven Dishes to Menu with Optional Wine, Champagne Pairings Also Available During Exclusive Three-Week Event
Ancora Waterfront Dining and Patio will spotlight top-shelf caviar from around the globe when the fourth-annual Caviar Festival takes centre stage at the False Creek restaurant from November 6 to 27.
During the three-week event, Executive Chef Ricardo Valverde will add six indulgent-yet-approachable à-la-carte items to the dinner menu and give guests an opportunity to sample an array of exotic caviar-driven dishes that also showcase his signature Peruvian-meets-Japanese ‘Nikkei’ cuisine.
In addition to dishes featuring tobiko, herring and trout caviar, Valverde will also offer playful approaches to the festival’s star ingredient with a cauliflower ‘panna cotta’ (toasted brioche, mountain caviar) and Peruvian waffle (chichi morada ‘caviar’, rice pudding mousse, pineapple).
All six feature Caviar Festival Menu dishes can also be enjoyed with optional BC wine pairings, including Culmina Family Estate Winery’s Unicus Grüner Veltliner 2017 and Fitzpatrick Family Vineyards’ Fitz Brut, as well as Marie Demets Tradition Brut Champagne.
