Throughout the Pacific Northwest Region, Fairmont Hotels & Resorts looks to create memorable experiences to help guests and locals alike ring in 2020. From elevated dining experiences to extravagant celebrations and parties, there is something for everyone this New Year’s Eve. 

Notch8 at Fairmont Hotel Vancouver offers two options to celebrate. A delicious five-course set dinner featuring Raviolo Bergese, Foie Gras Torchon, Wagyu Striploin and more, available from 5:00 pm to 7:30 pm. Tickets are $149 for adults with children’s à la carte menu items available for purchase evening of for guests ages 12 and under. For those looking for a glamorous night out, Notch8 invites guests to ring in the New Year with a New Year’s Eve Party featuring a decadent dinner featuring seven live stations including Seafood, Wagyu Beef, Lobster, Foraged and Found, Cheese Fondue, the popular “Cheese Wall” and dessert bar. A live DJ will keep the party going and a champagne toast at midnight will top off the evening. Dinner begins at 9:00 pm and the party will go until 1:00 am. Notch8’s New Year’s Day Brunch Buffet on January 1st will have seating available from 9:00 am to 1:00 pm and is priced at $99 per person. This brunch buffet features 12 stations including a carvery with Prime Rib, a West Coast seafood bar, Eggs Benedict with Dungeness crab, a kids buffet and an expansive sweets station with treats fresh from the in-house Pastry Shop and of course an extravagant Caesar Bar with a complimentary Caesar to begin the day. Fairmont Pacific Rim is ringing in the New Year with two sophisticated soirees to choose from. In The Lobby Lounge, a variety of toast-worthy cocktails are on the menu with live music by The Suits. Reservations from 9:00 pm onward include reserved seating, choice of featured small plate with a selection from West Coast Ice Bowl, Black Pepper BC Albacore Tuna Tataki, Togarashi Chicken Karaage, Wagyu Trio, dessert trio and midnight bubbles for $139 per person. In Botanist, Chef Laguna has created a six-course menu that features Northern Divine Caviar, Sablefish and Wagyu Striploin. Theres live music all night and the first seating, from 5:00 pm to 8:00 pm is $148 per person with $70 wine pairings. The second seating from 8:30 pm is $168 per person with $70 wine pairings and includes a midnight countdown with bubbles. Need something to recover from the night’s extravagance? Botanist has that covered with the Resolutions & Remedies New Year’s Day Brunch from 10:00 am to 2:00 pm on January 1st at $76 per person. At Fairmont Vancouver Airport, celebrate the new year with live music entertainment and an extravagant New Year’s Eve Buffet Dinner available from 5:30 pm – 9:30 pm in Globe@YVR. Nibble all night on the seafood bar with fresh shucked Oysters, Beer Poached Mussels and Clams, Smoked Salmon and Poke bar. The carvery station includes Fraser Valley Suckling Pig and Pepper Crusted Filet Beef, along with entrees like Roasted Sablefish, Grilled Lamb T-bone, Dungeness Crab Gratin, Smoked Beef Short Ribs and Squash Lasagna. ARC at Fairmont Waterfront boasts two ways to get in the 2020 spirit. For early diners, kick off the evening with a family-style menu available from 5:00 pm to 7:00 pm and enjoy live music by singer, songwriter Antoinette Libelt. Priced at $99 for adults and $45 for children 12 and under, this is the perfect option for families or those looking for a way to start off their evening of celebrations. Guests can enjoy culinary indulgences such as a chilled seafood selection for the table including Kusshi Oysters, Salmon Tartare, Split King Crab Legs, salad and charcuterie selections. The dinner continues with the option of a main course, with offerings such as Prime Beef Tenderloin, Pan Roasted Turbot, Black Trumpet and Truffle Tagliatelle or Farmcrest Farms Chicken Albufera. The evening’s sweet finish features a Raspberry Pavlova and Mignardises. For those looking to make a night of it, Chef Michael Pagnacco’s gourmet New Year’s Eve menu begins with chilled seafood for the table including Mussel ‘Nduja Soup, Half Lobster, Scallop Crudo, Kusshi Oysters, Salmon Tartare, salad and charcuterie selections, followed by a Grapefruit Granite to cleanse the palate. Diners can then indulge in a selection of main course dishes, such as Prime Beef Tenderloin, Pan Roasted Turbot, Black Trumpet and Truffle Tagliatelle or Farmcrest Farms Chicken Albufera. Sharing confections include Raspberry Pavlova and Mignardises. Reservations are taken from 8:00 pm with tickets at $169 for adults and $85 for children 12 and under.
