Versante Hotel is proud to announce the opening of Bruno, their first restaurant in a suite of two, focused on locally sourced ingredients, beautiful share plates, and a flexible, evolving menu influenced by the local farmers and artisans that supply their ingredients. The restaurant led by a team of industry veterans is set to open on August 29th, 2021. Bruno will boast a destination-inspired cocktail menu, local craft beers and an expertly curated wine selection.

Located inside Richmond B.C.’s Versante Hotel, just a short drive from Vancouver’s YVR Airport, Bruno is the first restaurant by the hotel group and one they are deeply proud of. Bruno, led by award-winning chef Will Lew, takes visitors on a culinary journey where guests are encouraged to fall in love with British Columbia’s rich and diverse culture, land, and fare. Incorporating locally sourced ingredients such as lavender, mussels, oysters, and honey into their recipes, Bruno offers high-impact dishes focused on sustainability and family-style presentation.

“Bruno is accessible, with recognizable dishes delivered in a high-impact, opulent way,” explains Executive Chef Will Lew. “As an organization, we believe in being stewards of B.C. and incorporating local ingredients into everything we do. Making guests fall in love again with B.C. and find beauty in their own backyards is what it’s all about, and we hope to do that by showcasing locally sourced ingredients such as duck from the Fraser Valley, lavender from Vancouver Island, and shellfish from the Pacific Ocean in unique, never-before-seen ways.”

Focused on family-style plating to encourage conversation and reconnection, Bruno will offer a robust menu of seafood dishes, including their signature item, the Oyster Shellfish Caviar Cart. Featuring local oysters, caviar, mussels, clams, scallops, and Dungeness crab plated on a tableside cart and accented by dry ice and artfully chosen accents, the dish will soon be a fan favourite. Bruno’s Truffle Lavender Duck, another staple, will feature farm-fresh lavender sourced from Cortes Island and duck from the Fraser Valley.

“Every element of Bruno was chosen with the idea of connection in mind,” shares General Manager Brad Stanton. “Our inviting space is designed for guests to create new memories together, and our food plating style encourages connecting through the celebration of great food and company. As we open our doors to host international and local guests alike, we endeavour to treat everyone like family. Bruno is an impressive 6,000 square foot space with a large 18-seat community table, as well as more intimate seating and a private room with seating for ten. Anchored by an impressive bar with room for 30 guests, the space is poised to be the new go-to for residents, tourists, the rapidly growing Airport District business community, and jet setters getting ready to board their next flight.
