Chronos 2020 Rosé

Winemaking
The 100% Syrah grapes were sorted and de-stemmed into the press where the fruit was held for 5 hours before pressing was started. After pressing the juice was divided into two batches and fermented separately with different varietally enhancing yeast strains. Blended post ferment.

On the nose
Enhanced notes of candy and less pronounced aromas of white pepper.

On the palate
Palate is dry, bright, light and fruit forward. This rich Rosé shows notes of red, crunchy fruit: watermelon, strawberry, and raspberries.

Food Pairings
Italian cheese sandwich, Ham and gouda soufflé, Rosemary & blue cheese flatbread.

Chronos 2020 Sauvignon Blanc

Winemaking
This wine is produced with 100% Sauvignon Blanc grapes. The Okanagan Falls vineyard was harvested in two sections at two different times. Grapes were then hand sorted and whole bunch pressed. Blended together after each lot was fermented separately with different varietal specific yeasts. Grapes from the top portion of the vineyard displayed very tropical flavours, while the bottom portion of vineyard shows more grassy notes. The blended wine is a perfect balance.

On the nose
Aromas of green apple, tropical and passionfruit.

On the Palate
Palate is dry with light body. This Sauvignon Blanc bursts with juicy flavours of green and tropical fruits like green apple, pineapple and passionfruit.

Food Pairings
Smoked salmon, Green hummus, Sautéed asparagus.
