Chef Marc-André Royal, a Montreal native, owns Le St-Urbain, renowned as one of the city’s finest restaurants. His culinary journey began at 17 when he moved to Whistler, BC, with aspirations of becoming a snowboarder but discovered his passion for the restaurant industry in the kitchen at Araxi. After three years at this prestigious ski resort, he returned to Montreal to further refine his skills at ITHQ (Institut de Tourisme et d’Hôtellerie du Québec). Under chef Claude Pelletier at le Méditerranéen, he continued to develop his expertise before embarking on a tenure at London’s Club Gascon, a MICHELIN-starred establishment led by chef Pascal Aussignac. Upon returning to Montreal, Royal advanced his career at 357C, an upscale private club, before realising his dream of opening his own restaurant, Le St-Urbain, in 2008. Three years later, he expanded his culinary endeavours with La Bête à Pain, offering a diverse experience for guests including dining, takeout, bakery, and pastries. Today, Chef Marc-André Royal oversees four successful ventures in Montreal and its surrounding areas, known for his Canadian cuisine which emphasises seasonal, fresh, organic ingredients, and sustainably harvested fish.
