Fairmont Waterfront is delighted to unveil a series of curated experiences in celebration of one of British Columbia’s most anticipated culinary traditions—spot prawn season.
Beginning May 20, 2025, Fairmont Waterfront’s ARC Restaurant will present three distinctive activations to celebrate the season: a Province to Plate feature menu, an immersive Spot Prawn Boil dining experience, and a live cooking demonstration at the Chefs’ Table Society of British Columbia’s annual Spot Prawn Festival.
The series further demonstrates Fairmont Waterfront’s ongoing commitment to sustainability, all the while showcasing the very best from the West Coast.

Province to Plate Menu
For the first time, ARC Restaurant’s signature Province to Plate menu will spotlight B.C. spot prawns, launching Tuesday, May 20, 2025.
Known for celebrating the finest local ingredients, this curated menu showcases the freshest seasonal produce British Columbia has to offer.
Throughout spot prawn season, guests can indulge in coastal-inspired dishes such as creamy spot prawn chowder and a flavourful spot prawn boil, featuring prawns gently steeped in aromatic broth, served with buttered asparagus and sunchokes.
All spot prawns served throughout the season at Fairmont Waterfront are sourced in partnership with Ocean Wise, underscoring Waterfront’s continued leadership in sustainable hospitality.

Spot Prawn Boil
On Thursday, May 22, 2025, ARC Restaurant will host an immersive Spot Prawn Boil dining experience, a refined culinary event held at the restaurant’s signature Chef’s Bench.
The menu will feature freshly caught B.C. spot prawns, delicately simmered in a fragrant spiced broth, alongside local B.C. wine pairings. With sweeping oceanfront views, this thoughtfully designed evening will delight the senses and celebrate the flavours of the West Coast. This multi-course feast is priced at $163pp.

Spot Prawn Festival
The Chefs’ Table Society of British Columbia’s renowned Spot Prawn Festival returns to False Creek Fishermen’s Wharf on Granville Island for its eighteenth year on Sunday, May 25, 2025, celebrating spot prawns as a fresh, sustainable, and locally sourced delicacy.
This year, Chef Adam Middleton, Executive Chef of ARC Restaurant, joins a lineup of twelve acclaimed Vancouver chefs, each serving up a unique spot prawn dish to be enjoyed by festival attendees throughout the event.
