Fairmont Waterfront’s ARC Restaurant is proud to announce its latest partnership with HYPE Chocolate to launch an exclusive Artisanal Ice Cream Pop-Up, adjacent to ARC Patio in the heart of downtown Vancouver.

Co-founded by Scott Symons and Marlayna Pincott in 2022, HYPE Chocolate has been offering a variety of delicious, sweet treats and desserts since their inception, redefining the ordinary through innovative flavours and meaningful partnerships.

HYPE Chocolate’s partnership with Fairmont Waterfront reflects a shared dedication to innovation, sustainability, and lasting community impact. Through its partnership with Cocoa Horizons, HYPE Chocolate ensures its cacao is ethically and sustainably sourced – aligning seamlessly with Fairmont Waterfront’s own eco-conscious values, proudly recognized with a certification of ‘5 Green Key Hotel’ from Green Key Global.

To mark the unique nature of this collaboration, the pop-up will feature flavours distinctive to Fairmont Waterfront, including a signature Lemon, Wildflower Honey & Thyme sorbet, an affectionate nod to the hotel’s rooftop garden and bee apiary.

Guests can also enjoy a Salted Chocolate ice cream – featuring sea salt from Vancouver Island – a tribute to Fairmont Waterfront’s pure coastal luxury ethos. Complementing this will be a Vanilla Bean & Brown Butter Croissant flavour crowned with edible gold, offering a decadent nod to the hotel’s refined and elevated reputation. A rotating selection of signature flavours will be featured in the weeks ahead.

HYPE Chocolate’s signature seasonal B.C. berry cups topped with warm, velvety chocolate will also be on offer, providing the perfect indulgent summer treat for pop-up visitors.

The pop-up – adjacent to ARC Restaurant’s Patio – will be open 11AM-7PM on weekends throughout July, August and the first two weeks of September.
