The Dog Days of Summer at L’Abattoir

Soak up the last of the summer and join Chef Jasper Cruickshank for his heirloom tomato salad with watermelon, fragrant Thai basil, and creamy house-made ricotta. This year’s beautiful tomatoes come from our friends at Stoney Paradise Farm in the Okanagan Valley and Hannah Brook Farm right here in the Lower Mainland, whose fields are brimming with the late summer bounty. This season is one of the best times of year for Chef Jasper and our culinary team in both the dining room and the Private Dining Room, with so much seasonal produce available! Come celebrate the best ingredients our farmers have to offer with dinner tonight.

Join us on Thursday, October 23rd, as L’Abattoir and S. Pellegrino wrap up the 2025 Sipping Around BC series with an evening dedicated to Vancouver Island and Gulf Island wines. Enjoy wine pairings from Averill Creek Vineyard, Unsworth Vineyards, and Kutatás Wines, presented by the winery principals, alongside a five-course menu from Chef Jasper Cruickshank that celebrates the region’s unique coastal character.

 

 

Introducing the Inlet Cocktail—a bold blend of Sheringham Raincoast Gin, Glenglassaugh 12-Year Single Malt, manzanilla sherry, northwest alpine bitters, burnt bay leaf, and olive. Drawing on ingredients from around the globe, each with its own coastal influence. Imagine yourself sipping on a burnt martini while sailing on a fisherman’s boat; salty, strong and daring.
