Fable Kitchen launches new brunch menu just in time for the new season
Vancouver may not have an official cuisine, but it most certainly has an official meal: brunch. And Fable Kitchen’s famous brunch has earned a legion of fans with its made-from-scratch, locally-sourced approach to classics, bowls, and Things On Toast.
Chef Trevor Bird and the team have been hard at work this summer, testing and perfecting new dishes, and the fruits of all that delicious labour are now available for brunch lovers every Saturday and Sunday.
Favourites like Eggs Benedict with house made olive oil Hollandaise, Pulled Pork Johnny Cakes, and French Toast are still front and centre on the menu, but they are surrounded by a host of new dishes certain to join them in the brunch hall of fame.
The Roasted Cauliflower Bowl is vegan, gluten-free, and packed with deliciousness like chickpea fritters, curry mayo, pickled onions, herbed potatoes, and greens for a virtuous, satisfying, big bowl of brunch. For those looking for a dish with more familiar brunch flavours, BLT Things on Toast builds ricotta, pork belly, heirloom tomatoes, aioli, and pea shoots on top of delicious sourdough for an irresistible spin on the classic sandwich.
