Hart House Welcomes New Chef Michael Genest     

Hart House at Deer Lake is pleased to announce that Michael Genest has taken on the role of Executive Chef at the Burnaby restaurant.
Mike is homegrown talent: he grew up in North Vancouver’s Deep Cove neighbourhood and studied at the Pacific Institute of Culinary Arts. As a student he supplemented his formal training with plenty of hands-on experience by working as Sous Chef at the Arms Reach Bistro in Deep Cove. He subsequently became Executive Sous Chef at Sonora Resort Canada (Relais and Chateaux) on an island off the coast of Vancouver Island. He characterizes his cooking style as West Coast, but he loves travelling, and as a result his cooking has been influenced by cuisine from around the world. In 2010, for example, he attended a three-month program in Southern Italy’s Calabria district studying regional Italian cuisine and wine.

Mike’s unique combination of global influences and local sensibilities is evident in the new menus he has already introduced at Hart House. The lunch menu includes selections such as Roasted Summer Vegetable Soup, Sockeye Salmon Panzanella and Dungeness Crab Spaghettini while options for dinner include a Halibut Duo, Seared Lamb Loin and Brome Lake Duck Breast. Mike is also launching a fresh sheet three course prix fixe, which will change weekly and offers great value at only $36. All of Mike’s cooking evidences his enthusiasm for the local and sustainable, which drives him to cultivate relationships with local suppliers and to take full advantage of Hart House’s on-site herb garden.
