Claudio’s Ristorante is introducing a new lineup of hearty, home-spun fare to the fall and winter menu at the beloved Italian ristorante located in the Solo District of Burnaby at 103-4402 Skyline Drive.

Open for Lunch Monday to Friday at noon, daily Dinner service at 5 p.m. and Happy Hours Monday to Friday from 3 to 5 p.m. and Monday to Sunday from 9 p.m. to close, Claudio’s is named in honour of the father of owner-operators Stefano and Daniele Magagnin, who perfected his craft as a chef, host and restaurateur at his family’s bar and hotel in the small mountain pass of San Boldo, Italy. Claudio emigrated to Canada with his wife Maria in the 1980s and opened several beloved restaurants in Vancouver including La Roca on Vancouver’s Commercial Drive and Pasta Amore in North Burnaby.

Claudio’s Executive Chef Aubrey Aliggayu, who honed his skills at restaurants in New York (including Michelin-starred and NY Times three-starred Manhattan Italian hotspot Rezdôra), Chicago (Schwa and S.K.Y.) and Vancouver (Cioppino’s and Pasta Amore) before taking the helm of Claudio’s back-of-house family in April, has put his stamp on a new menu that features highlights such as:

ANTIPASTI
  • Prosciutto e Burrata (Prosciutto di Parma, burrata Pugliese, EVOO);
  • Calamari Fritti (pepperoncini, zucchini, lemon, basil oil);
  • Carpaccio (Wagyu beef, truffle aioli, arugula, shaved Pecorino);
  • Almond Ricottina (house-made ricotta, olive tapenade, balsamic reduction, focaccia);
  • Cozze (mussels, white wine, fennel, Calabrian chiles, parsley oil, focaccia).

INSALATA
  • Verde (mixed greens, fennel, candied hazelnut, beets, shaved goat cheese, cranberry vinaigrette);
  • Cacio e Pepe (iceberg, Guanciale, Pecorino, Grana Padano);
  • Burrata Caprese (heirloom tomato, tricolour cherry tomato, basil oil, EVOO, burrata Pugliese).

PASTA FRESCA
  • Paccheri Pomodoro Burrata (burrata Pugliese, EVOO, basil, tomato sauce);
  • Tagliatelle Bolognese (pork shoulder, prosciutto, mortadella, Pecorino, Grana Padano);
  • Mezzi Rigatoni ’Nduja (’Nduja, onion, chili, garlic, cream, Grana Padano);
  • Chitarra Carbonara (Guanciale, cream, Pecorino, cured egg yolk, Grana Padano);
  • Capellini Neri Cod (smoked cod, spinach, crispy capers, pangrattato, beurre blanc).

PIZZA
  • Boscaiola (tomato, Fior di Latte, Italian sausage, mushroom);
  • Prosciutto e Rucola (tomato, Fior di Latte, Prosciutto crudo, cherry tomato, arugula);
  • Capricciosa (tomato, Fior di Latte, Prosciutto cotto, mushroom, olives, artichoke);
  • Patatosa (Fior di Latte, truffle, potato, pancetta, chili);
  • Pepperoni Piccante (tomato, Fior di Latte, pepperoni, ricotta, chili, red onion, hot honey);
  • Bresaola Romana (mozzarella, bresaola, fresh arugula, shaved Grana Padano, Salmone Romana (tomato, smoked salmon, romaine, house-made mayonnaise, dill).

SECONDI
  • Chicken Parmigiana (tomato sauce, Fior di Latte, Grana Padano, salad);
  • Salmone (salmon, grilled broccolini, crispy Brussels sprouts, Soubise sauce);
  • Bistecca (12oz striploin, red wine demi glace, salad).

DOLCI
  • Affogato (gelato, espresso, crumble);
  • Bonet Piemontese (amaretti custard pudding, Chantilly, amaretti crumble);
  • Tiramisu (lady fingers, espresso, Mascarpone).

Claudio’s Happy Hour Cibo menu showcases Beef Ragu Arancini, $5 ea., Marinated Sicilian Olives, $5, Gnoccho Fritto, $6; Truffle Potato Chips, $7; Garlic Parmesan Bites (garlic, Grana Padano, Pomodoro), $8; Antipasto Board for Two, $14; Margherita (tomato, Fior di Latte, basil) or Claudio’s Diavola (tomato, Fior di Latte, Calabrese, olive, pepperoncini) Pizzas for $17 and $19, respectively; Paccheri Pomodoro Burrata (burrata, EVOO, basil tomato sauce), $18; and Chitarra Carbonara (guanciale, cream, Pecorino, cured egg yolk, Grana Padano), $21.

The Happy Hour Bevande lineup includes a selection of local and import draught beer, 5oz glasses of house red, white, rosé and Prosecco and 1oz highballs for $5 each, $8 Margaritas, Mojitos and Sangria and 2oz cocktails (Aperol Spritz, double highballs, Negroni and Old Fashioned) for $10 each.

Behind the bar, Claudio’s shakes up a creative list of classic and contemporary cocktails that include the ‘Bruschetta’ (rosemary coriander dry vermouth, Tio Pepe Fino sherry, tomato water), the ‘Claudio’ (400 Conejos, Amaro del Capo, apricot, lemon), the ‘Olive Oil Sour’ (Grappa di Moscato, olive oil, egg white, lemon), Caffè Fiore (Hennessy VS, coffee-infused Amaro Nonino, crème de cacao, rose coffee foam) and others and offers a comprehensive list of Italian wine available by the glass and bottle as well as digestivi and spirit-free, zero-proof beverages.

“We wanted to evoke our father’s love of creating an elevated social dining experience that maintains an approachable and authentic ‘home away from home’ atmosphere,” says Stefano Magagnin, who opened Claudio’s in 2022. “We take pride in bridging classic and contemporary with fresh takes on Italian fare made with simple, ethically sourced ingredients that pay homage to the Italian peninsula and make every visit feel like sitting down for a meal made with love at Nonna’s house.”
