Elevated Sips, Iconic Space: Ellipsis Joins Vancouver Cocktail Week 2026

Ellipsis is proud to announce its official participation in Vancouver Cocktail Week (VCW) 2026, running from March 1 to March 8. Set within the architecturally renowned Waterfall Building, Ellipsis will serve as a hub for industry collaboration and community-focused celebrations.

As a premier celebration of the city’s globally recognized beverage culture, Vancouver Cocktail Week offers a significant platform for creative exchange. For Ellipsis, participating in the festival is an opportunity to showcase its evolving cocktail program and the technical talent of its bar team. These events allow Ellipsis to highlight its commitment to the craft, pairing its own mixology expertise with celebrated guest professionals to create a destination for a discerning audience of peers and enthusiasts.

The Cinq à Sept Feature Menu

March 1–8
5 PM – 7 PM Daily

Ellipsis invites guests to join in a pause that feels deliberate – a reminder that the in-between moments are often the ones that matter most. The Cinq à Sept feature menu is an invitation to slow down and settle in, marking the shift between what was and what’s next. It is designed as a space to reconnect and let the evening unfold with intention.

The Drinks: The menu features three signature cocktails created by Zoe Bates, highlighting Choya Kokuto Umeshu, Empress 1908 Indigo Gin, and Flor de Caña 12YR.

No tickets required. Walk-ins are welcome.

Island Takeover – Wind Cries Mary x Ellipsis

Friday, March 6
6:30 PM – 12 AM

The “Island Takeover” brings the acclaimed team from Victoria’s Wind Cries Mary to the Ellipsis cocktail bar for a high-energy guest shift.

The Vibe: Experience one of’s most celebrated cocktail programs without leaving the city. The team will be pouring Empress 1908 Gin-forward cocktails that showcase their signature coastal perspective.

No tickets required. Walk-ins are welcome, and reservations can be made via Tock.

Vancouver Cocktail Week Gala of Cocktails

Saturday, March 7
7 PM — 12 AM

The Ellipsis team will be out in force for the festival’s marquee event, the Gala of Cocktails. This grand tasting brings together the city’s top bartending talent and spirits brands for an evening of high-level mixology and industry celebration. The Ellipsis team will be stationed at both the Empress 1908 and Choya booths, shaking up signature cocktails that reflect the venue’s creative approach and technical precision

Soft Power Sunday
(International Women’s Day)

Sunday, March 8
12 PM – 4 PM

To conclude the week, Ellipsis presents Soft Power Sunday, a women-led tropical brunch celebrating leadership and culture in hospitality. Hosted in a female-owned and fully female-operated space, this event offers a sun-washed sanctuary for recovery and connection.

Featured Drinks: Flor de Caña rum cocktails curated by Zoe Bates.

Entertainment: A live DJ setting a relaxed, tropical tone.

Details: 12 PM – 4 PM. Tickets are $15 per person (includes a Flor de Caña welcome cocktail).
