How long is too long to keep a wine? Based on my search a B.C. Sauvignon Blanc is best enjoyed within one to two years. Under ideal storage, darkness and a consistent low temperature maybe up to three years.
So what happens if you accidently forget it’s on the shelf? Well of course you should try it because you just never know. It might just surprise you.
This is a wine that I enjoyed mid January of this year. Sometimes if I’m feeing lazy and don’t want to trudge down to the basement (our basement is only accessed from outside) I will ask hubby to bring up a few wines for me. When he handed me this one he wondered aloud if the wine would still be drinkable. I wasn’t sure and based on my notes from a review of the same vintage I did in March of 2022 when I said “made to be enjoyed now” it was questionable.
I’ve included here the winery’s notes at release and my notes from March, 2022 followed by my notes January, 2026.

Stainless fermented, then barrel-aged for 2 months in French oak.
Tasting Notes
Classic aromas circle in the glass: honeydew melon, pear, and a hint of tangerine. Taste hints of apricot and mango swirled with ripe gooseberry. This wine is mellowed by barrel ageing, resulting in a sturdy and vibrant finish with delicate traces of oak.

My notes March, 2022
Hints of Meyer lemon with good acidity. Crisp and fruity. The Sauvignon Blanc makes an enjoyable stand-alone sipper, yet also lends itself well with pairings such as mild cheeses, and more delicate dishes with cream sauces or with white fish, or sockeye salmon. Think pairing with BBQ fare.
A definite winner on the patio in summer, and just as at home in front of the fireplace accompanied by savoury snacks and a good Netflix movie.
Made to enjoy now, and why wouldn’t you? Smooth and equally delicate, this is a pleasing wine.

I had occasion to pair the Time Sauvignon Blanc with an Asian dish of Dumpling Soup with Noodles. That dish is fast becoming a family favourite because you can easily adjust the recipe for a crowd. Recipe #ThisWineThatDish previously paired with a Chardonnay, I also enjoyed the soup equally well with the Time Sauvignon Blanc.

Here now are my wine notes from January, 2026
Opening with Brioche, and citrus, especially white grapefruit , excellent acidity some slight toasty notes like caramel flavour without the sweetness.
If, like me, you enjoy a summer campfire with a toasty, almost charred marshmallow you will enjoy this wine as much I am. Again, I must emphasis the yummy flavours stand out but there is no associated sweetness. This a a dry wine that is deliciously complex
Some herbaceous notes follow the nose to the mouth
I would caution you not to drink this wine too cool. This bottle came from my basement which is around 55 F then into the refrigerator for only 20 mins and then poured.
Most would say not chilled enough which might be true if it were summer but given the existing climate I found the “less than chilled” temperature to be ideal for allowing the intense flavours to be up front. Later the stone fruit begins to show itself which adds to the richness.
Different experiences, same deliciousness. I enjoyed this wine on release and then, rather remarkably what could have been past its prime. Hard to say which was the better tasting but with the January tasting the wine was richer and more developed and my first thought was WOW. I wish I had more of this wine in the basement.
