The always charismatic Vikram Vij, one of North America’s masters of Indian fine dining, welcomes Chintan Pandya, the James Beard Award-winning Executive Chef and Founder of New York’s Unapologetic Foods, for a taste of the groundbreaking restaurant Adda. Together, these two icons of Indian cuisine—as renowned for the hospitable experiences they create as the dishes they serve—will take guests on a multi-course culinary journey featuring an elevated tasting menu celebrating regional specialties, aromatic spice, and luxurious ingredients, all paired with exceptional wines and enchanting storytelling. Vish Mayekar, Executive Chef of Elem, Van Mag’s Best New Restaurant 2026, welcomes Darren Maclean, of Calgary’s revered izakaya Shokunin, and Ron Hsu of Atlanta’s Michelin-starred Lazy Betty for the launch of his cookbook, Down South + East. These chefs are known for sophisticated flavour, beautiful dishes, and global influences that draw on Mayekar’s Indian and Hsu’s Chinese backgrounds, and Chef Maclean’s depth in Japanese cuisine. Guests can expect an elegant, ingredient-driven dining experience, paired flawlessly with fine wines and well-crafted cocktails, and a copy of Chef Hsu’s cookbook for each couple to take home.

Two charming neighbourhood bistros with a similar ethos and Michelin Bib Gourmand recognition, but from opposite ends of the country, come together for this perfectly lovely homage to French country fare. Gary’s, a cozy and intimate restaurant run by partners Chef Mathew Bishop and Front-of-House pro Bailey Hayward, welcomes the team from Montreal’s Parapluie, Chef Robin Filteau Boucher and Front-of-House Manager Karelle Voyer. Both restaurants serve simple dishes done exceptionally well (think chicken cordon bleu or pork collar with ’nduja), alongside intriguing wines, all of it served with a genuinely warm hospitality.
