A Little About The Author
Maria Fazzari Larosa, was born and raised in Vancouver, BC, her parents immigrated from Reggio Calabria. Growing up in an Italian household, where her mother prepared the simplest most delicious authentic southern Calabrian Italian meals. Cooking is Maria’s number one passion, and she loves bringing family and friends together through preparing cooking meals. Over the years cooking has turned into Maria’s passion project.

Mushroom Crostini/Crostini ai Funghi – This mushroom crostini recipe that’s featured under Appetizers/Antipasti chapter I in “Maria’s Italian Cucina” is the perfect appetizer to serve up for any holiday event. This is a regular go to appetizer given its simple assembly and rave reviews!
“Il Sugo di Maria” – Maria’s Italian Tomato Sauce – is used throughout her cookbook “Maria’s Italian Cucina.” A good tomato sauce is the foundation for so many wonderful dishes; pizza, fish, and of course pasta. My recipe for a basic tomato sauce is different from many other tomato sauce recipes, and has been my mothers tomato sauce recipe. Served with penne pasta.
Fennel Salad- Fennel is a member of the carrot family. The base of its long stalks weave together to form thick, crisp bulbs that grow above ground. When ripe, it has a crisp texture similar to celery and a licorice flavour. Fennel salad is delicious and makes a great accompaniment to many dishes.
Ciambella alla Arancia/ Orange Cake – Ciambella is an Italian ring shaped cake that’s is flavoured with orange zest. Ciambella pairs well with warm milk, coffee, and dessert wines, and is typically served at breakfast time in Italy. So good!
