Restaurant for a spectacular culinary collaboration

Hawksworth Restaurant is delighted to announce an exceptional culinary event, featuring the renowned Canadian Chef Ron McKinlay for a one-of-a-kind collaboration dinner on Wednesday, October 2nd. Originally hailing from British Columbia, Chef McKinlay is the Executive Chef at the highly acclaimed Canoe restaurant in Toronto.

Leveraging a decade in some of the world’s most celebrated MICHELIN-starred and hatted restaurants across the U.K., Australia, and the Middle East, Chef McKinlay brings an extraordinary depth of culinary knowledge to this event. His artistry shines through in his dedication to sourcing local ingredients and creating dishes that celebrate Canada’s diverse regions. Having honed his skills alongside some of the world’s top chefs, McKinlay is committed to pushing the boundaries of Canadian cuisine and delivering a memorable dining experience.

The seven-course menu created in collaboration by Chef David Hawksworth and Chef Ron McKinlay incorporates exceptionally fresh, locally sourced ingredients to highlight each flavour. The thoughtfully crafted menu, with a nod to BC favourites includes highlights such as:

•    Chef Hawksworth: fresh yellowfin tuna, dungeness crab, with squid ink crackers


•    Chef McKinlay: a wild mushroom ​​pithivier, with sweetbreads, braised trotter, and cauliflower

•    Chef Hawksworth: west coast mussels, halibut mousseline, farm spinach, velouté


•    Chef McKinlay: short rib & foie, truffled bordelaise, puffed tendon, and crispy flank


•    Chef McKinlay: chanterelle ice cream sandwich – birch syrup, biscoff crumb, and white chocolate. 


This premier dining experience is offered at $198.00 per person, promising a phenomenal journey through gourmet cuisine created by these talented Canadian chefs. Guests have the option to further enhance their meal with exquisite wine pairings, thoughtfully chosen by the expert Hawksworth sommelier team, available at an additional cost of $89.00 per person. This collaboration is in support of Growing Chefs whose mission is to help BC kids build connections with the earth and local food systems.
