One-Night-Only: Vietnamese Nostalgia Meets MICHELIN Innovation

Over the last few years, Vancouver has been home to incredible culinary collaborations, and this latest partnership is set to be one of the most exciting events in the city’s vibrant dining scene.

On Wednesday, February 5, 2025, as part of Destination Vancouver’s World Chef Exchange, Vancouver’s celebrated Anh and Chij joins forces with Chicago’s MICHELIN Bib Gourmand-awarded HaiSous Vietnamese Kitchen for a one-night-only event that showcases Vietnamese cuisine.

Chefs Vincent Nguyen and Thai Dang will take diners on a nostalgic journey back to the 1980s, an era of vibrant family feasts, sentimental recipes, and bold flavours. Through an indulgent 9-course menu, they’ll transform dishes inspired by their North American childhoods into a masterful showcase of artistry and heritage. The evening promises to blend Anh and Chi’s boundary-pushing techniques with HaiSous’ MICHELIN-celebrated approach, culminating in a fusion of tradition and innovation.

This remarkable event will kick off with a welcome beverage, canapés, and a lively ambiance that celebrates Vietnam’s rich culinary culture. Adding to the excitement, diners can deepen their connection to the theme with a screening of New Wave—an Oscar-eligible documentary on 80s Vietnamese diaspora culture—at the Rio Theatre the night before.
