Hawksworth Restaurant, a cornerstone of Vancouver’s fine dining scene, is proud to debut its refreshed Spring 2025 menu—a confident evolution that reflects the restaurant’s maturity, creativity, and enduring commitment to exceptional guest experiences.
Developed by Chef David Hawksworth and Head Chef Sylvain Assie, the new menu honours the restaurant’s classic foundation while embracing fresh ideas, vibrant seasonal ingredients, and a modern, brasserie-style spirit. Whether guests stop in for oysters and champagne at the bar or indulge in a multi-course meal in one of the restaurant’s distinct dining rooms, the updated offerings aim to deliver comfort, quality, and choice—with finesse.
“This new menu is a natural evolution—grounded in the classics that have always resonated with our guests, and shaped by the way people want to dine today,” says Chef David Hawksworth. “From seafood towers and timeless small plates to generous mains and seasonal sides, it’s about freedom, flavour, and finesse. It feels like a return to something familiar, but elevated—classic, comforting, and consistently exceptional. It’s still very much us—just more inviting than ever.”
Returning favourites like the elegant foie gras parfait with apple jelly ($37), the ever-popular Hawksworth burger ($29), and insanely delicious cioppino with saffron, fresh fish and shellfish ($38) are joined by new seasonal standouts, including West Coast halibut with coconut curry ($49), caramelized Fraser Valley chicken ($31), and a wide array of vegetable-forward dishes. The dessert program, led by Pastry Chef Marissa Gonzales, brings bold flavours and playful presentation to the table—from flambéed Baked Alaska ($18) to 70% Valrhona dark chocolate mousse ($16).
Alongside the new menu, Hawksworth introduces greater flexibility and value with an approachable three-course $36 business lunch, a refreshed cocktail hour from 4–6 PM daily, and weekend features like the Sunday Roast and Sunday Funday offerings.
