Two of Canada’s most revered legacy restaurants—both boasting impressive recent accolades—come together for what is sure to be one of the year’s most talked-about chef collaborations. At Vancouver’s sophisticated Five Sails, Culinary Director Alex Kim, winner of the 2025 Canadian Culinary Championships, welcomes François-Emmanuel Nicol of Quebec City’s Tanière3 for two nights of immersive, high-end dining inspired by natural and wild ingredients. Tanière3 famously received two stars in Quebec’s inaugural Michelin Guide and placed No. 5 on North America’s 50 Best Restaurants. Chef Nicol brings a passion for terroir-focused fare that will meet beautifully with Chef Kim’s love of BC’s remarkable bounty. Expect an evening that will be nothing short of exceptional.

Two chefs who share Mexican heritage, a mastery of modern technique, and a love of fine ingredients come together in a superstar collaboration at one of Vancouver’s favourite hot spots. Chef Hector Laguna of Michelin-recommended Botanist welcomes Chef Val M. Cantú, Co-Owner of the two-Michelin-starred Californios in San Francisco, for what is sure to be an epic experience. Californios, which is also No. 14 among North America’s 50 Best Restaurants, explores Mexican tradition through masterful, highly elevated tasting menus. Botanist celebrates the terroir of the Pacific Northwest with an equally refined menu. This experience will also feature Tequila Herradura cocktails and an impressive wine selection from an award-winning team.
