Executive Chef Aubrey Aliggayu’s Latest Menu Refresh Showcases Seasonally

Claudio’s Ristorante Executive Chef Aubrey Aliggayu has unveiled a new collection of seasonally inspired regional recipes and authentic-yet-contemporary classics on the spring and summer menu now available at the popular dining destination located in the heart of North Burnaby at 103-4402 Skyline Drive.
A beloved neighbourhood staple since 2022, Claudio’s offers an elevated social dining experience that evokes an approachable, ‘home away from home’ atmosphere and social dining plates comprising fresh, simple and locally sourced ingredients. Claudio’s array of antipasti, insalati, hand-made pasta fresca and pizze, decadent dolci and creative list of hand-crafted cocktails and wine all pay homage to the entirety of the Italian peninsula and the cuisine that makes it renowned the world over.
Aliggayu, who honed his skills at restaurants in New York (including Michelin-starred and NY Times three-starred Manhattan Italian hotspot Rezdôra), Chicago (Schwa and S.K.Y.) and Vancouver (Cioppino’s and Pasta Amore) before taking the helm of Claudio’s back-of-house family in 2025, has authored a new menu that showcases a fresh take on classic Italian cuisine and includes such highlights as:

- Focaccia (fresh-baked specialty Italian bread, EVOO);
- Brussels Sprouts (guanciale vinaigrette, pangrattato);
- Broccolini (balsamic, pangrattato, Grana Padano);
- Cacio e Pepe Arancini (arborio rice, Pecorino, Parmigiano, black pepper);
- Calamari Fritti (pepperoncini, zucchini, lemon, basil aioli).

Claudio’s bar team also presides over a list of signature and classic cocktails that include the Americano (Carpano Antica Formula, Campari, soda), Hugo Spritz(elderflower syrup, Prosecco, limonata soda), White Mezcal Negroni (400 Conejos, Noilly Prat extra dry vermouth, bitter bianco) and Quatro Bianchi(Nodo tequiliana, peach Ciroc, Tanqueray Sevile gin, grappa di Moscato), as well as Old- and New-World wines, local craft and import beer, spirit-free, zero-proof libations, digestivi and more.
Open for Lunch Monday to Friday at noon, daily Dinner service at 5 p.m. and Happy Hours Monday to Friday from 3 to 5 p.m. and Monday to Sunday from 9 p.m. to close, Claudio’s is named in honour of the father of owner-operators Stefano and Daniele Magagnin, who perfected his craft as a chef, host and restaurateur at his family’s bar and hotel in the small mountain pass of San Boldo, Italy.
