Featuring Seven-Course Journey Across India

Desi Indian Lounge will dedicate three evenings of its signature Himsagar seven-course tasting experience to supporting the Summerland community following the recent fires, with 50% of Himsagar sales from September 10, 11 and 12 donated in support of Summerland fire relief efforts.

For Deepak Khanchi, Owner of Desi Indian Lounge, the initiative is rooted in the Sanskrit philosophy Vasudhaiva Kutumbakam — “the world is one family.”

“Hospitality is about more than welcoming people into our restaurant. It is about being part of a larger community,” says Khanchi. “Vasudhaiva Kutumbakamreminds us that the world is one family, and when a community is facing difficult times, we believe in coming together and contributing in whatever way we can.”

For the three-night event, Executive Chef Bal Ajagaonkar will present Himsagar — Kashmir to Kanyakumari, a seven-course tasting menu inspired by the legendary Himsagar Express train journey across India.

Travelling from the northern reaches of Kashmir to Kanyakumari at India’s southern tip, each course represents a different region along the route, drawing inspiration from its ingredients, culinary traditions and distinctive flavours and reinterpreting them through Ajagaonkar’s contemporary approach to Indian cuisine.

“Himsagar is about taking our guests on a journey and showing just how diverse Indian cuisine is from one region to the next,” says Ajagaonkar. “For these three evenings, that journey has an even greater purpose. Food has an incredible ability to bring people together, and we’re proud to use this experience to help support another community while celebrating the people and producers of Summerland at our table.”

Further connecting the experience to the community it will support, wines poured during the three evenings will come exclusively from Summerland.

Desi Indian Lounge Wine Consultant and Sommelier Katya Movsesian will curate pairings featuring wines from Silk Scarf Winery and Lightning Rock Winery, matching Summerland wines with the diverse spices, ingredients and regional flavours showcased throughout the seven-course menu.

The complete seven-course Himsagar tasting menu with Summerland wine pairings will be offered for $85 per person, with 50% of Himsagar sales from all three evenings donated in support of Summerland fire relief efforts. Book a reservation via OpenTable..
