Michelin-starred Burdock & Co returns to its neighbourhood roots with a new à la carte bar menu, offering a more casual way to experience one of Vancouver’s most acclaimed restaurants.

The bar menu features some of chef-owner Andrea Carlson’s personal favourites alongside seasonal riffs on dishes that have been much-loved since Burdock opened in 2013. Drop in for the ever-popular buttermilk fried chicken, chilled sesame udon and moreish ramen fries. Or linger longer with a glass of small-batch, terroir-driven wine selected by wine director Maisie Ryan.

Summer specials include fig-sap ricotta with Lillooet honey and sourdough toast, celebration salad with lemon verbena vinaigrette and uni gelato sandwich on a nori biscuit.

Burdock opened as a neighbourhood restaurant built around shared plates. During the pandemic, it evolved into a tasting-menu format, allowing Carlson’s cooking to become even more ambitious and deeply expressive. The new bar menu brings back the ease of the early days without sacrificing the creativity and exacting standards of Burdock’s moon menus.

Available exclusively at the bar on a walk-in basis, the new à la carte menu offers a relaxed, spontaneous way to enjoy some of the city’s finest dining as part of a regular night out.

GET BACK TO THE GARDEN

That same casual spirit will be spilling onto the Burdock & Co patio with a Bar Gobo takeover every other Sunday this summer.

Burdock’s lush street-side garden will transform into a smoking-hot yakitori party, with DJs from sister restaurant Bar Gobo spinning vinyl among the flowers and greenery.

Swing by as chef Kyumin Kim fires up the grill for skewers of mochi, cheese and assorted meats, while low-intervention, farmer-grown wines flow by the glass and bottle.

Burdock & Co is thrilled to announce O’Rourke Family Estate and Peak Cellars as the official wine partners for the August 11 Salty Magazine collaboration dinner with Johnny Spero of Passage at The Inn at Langley on Whidbey Island.

Recently opened in Lake Country, O’Rourke Family Estate is one of the Okanagan’s most ambitious new wine destinations. Designed by renowned architect John Taft, the dramatic estate marries contemporary architecture with raw granite, working vineyards and an underground network of caves. The property was recently featured in Robb Report as part of the Okanagan’s emergence as a luxury wine destination.

O’Rourke Family Estate wines are shaped by Lake Country’s cool climate, glacial and granite-influenced soils and meticulous farming across distinct vineyard blocks. Elegant, age-worthy pinot noir and chardonnay are the core focus, each crafted to express tension, purity and a sense of place. Fruit is hand-harvested and handled with restraint, with fermentations tailored to preserve varietal detail and natural freshness.

Sister winery Peak Cellars offer a complementary, natural-leaning expression of the same landscape. Small-lot production, native fermentation and minimal intervention let the fruit speak for itself. From vibrant, mineral-driven rieslings to complex reds and expressive roses, Peak Cellars crafts wines that are full of character.

Both wineries recently earned scores above 90 points from legendary wine critic James Suckling, with particular praise for the balance, freshness and restrained oak of their cool-climate chardonnay.
