Mains offer a dazzling choice including traditional Lobster Thermidor (creamy dijon and mushroom sauce, with saffron pearl couscous, spinach and roasted roma tomato) paired with Covert Farms Rosé or perhaps you’d prefer Lois Lake Steelhead Trout and Lobster (summer pea risotto, creamy yellow tomato coulis) paired with Le Vieux Pin Rosé , or, for those who prefer the simple, sybaritic pleasure of digging into a Whole Lobster, Provence offers a choice of three preparations – grilled, steamed or sautéed Provençal-style. All come accompanied with seasonal vegetables and seven grain rice. For this dish sommelier Goudreau suggests Moon Curser’s multi award-winning Arneis.
Dessert is Blueberry Shortcake created by Chef de Cuisine Sheldon Maloff and featuring locally-grown BC Blueberries with whipped cream. The suggested wine pairing is Paradise Ranch Late Harvest Merlot. It doesn’t get any more summery than this!
